Sunday’s Shenanigans

I love that I had absolutely NOTHING to do today. Nowhere to go, either, other than to Jay’s parents’ for a free lunch. I busied myself in the kitchen for most of the time I was home…I wanted to make cupcakes, but I also wanted to make these: Hot Cocoa Cookies, after seeing them on Iowa Girl Eats the other day. I ended up buying regular mini-marshmallows, because even though I’ve seen the “Mallow Bits” here in town, I couldn’t find them when I looked. Those were somewhat of an “If I have time today” project. Although, one of Jay’s coworkers came over yesterday afternoon to help fix our ancient furnace, so I might bake them anyway, although I’ll probably wait until tomorrow night to do them.

I started on breakfast, rather than sitting around watching “Meet the Press.” This week’s only redeeming quality was Chuck Todd at the round table discussion, but other than that, it was a little too dull for me this morning. So I made some hash browns, sausage, scrambled eggs and toast. After that, I got the kitchen cleaned up, and started in on the cupcakes.


I used this recipe for the base of the cupcakes. For whatever reason, I thought this time around, I’d go simple. Yellow butter cake and buttercream frosting. Regular-sized, and mini ones:


I think my oven’s a little lop-sided or something. I really only made the mini ones because I didn’t really have enough batter to make more than about two more regular-sized cupcakes. I didn’t really want to use an entire muffin pan for two cupcakes, so I got out my mini-muffin pan instead.

I used a different buttercream recipe this time–Gingerbread Bagels’ Vanilla Buttercream. Holy COW is this some good stuff!


So creamy. So rich. The sprinkles weren’t really necessary, but I thought they might be fun anyway.

And because I’m a nice person, I’m planning on bringing the bulk of these to work tomorrow–Just because.

There weren’t a whole lot of them, so most of them have been eaten. They’re the perfect size for the bambino, who really just likes to eat the frosting off them anyway!

And while I didn’t really have to, I decided to wash the bedding, which is in the dryer now. I think the bambino and I are just going to have peanut butter sandwiches for dinner tonight…My father-in-law fixed pork roast, mashed potatoes and corn for lunch this afternoon, and due to some serious snackage on all our parts once we got home, no one’s really all that hungry at the moment. Jay can have leftover pizza when he gets home from work–He had to run in and take care of a few things because the head news guy is out on medical leave for the next week or so. In the meantime, I’m going to get those sandwiches made, and put my bed back together! Have a great evening everyone!
