I’ve had a rough week. I am sad that my mom’s gone now, and it feels like I hardly got to spend much time with her. The weather has also been horrid in that my SAD has been going hay-wire, and I’ve spent the past few days alternating between loathing everything and everyone or wanting to burst into tears. Guess it’s time to break out the Vitamin D and start taking that regularly. I was cheered up a bit by the fact that it was (finally) sunny on Wednesday…But then Thursday I awoke to this:

Effing SNOW. And yeah, that’s after the bulk of it melted, but still. It’s the biggest single reason I hate living in South Dakota and why I wish desperately I could be a snow bird. It wouldn’t be so bad if there wasn’t so much of it that stuck around. I could deal with it better if we had another winter like last year…That was perfect. What little snow we did get didn’t stick around for very long–Not unlike the Ohio winters I am still used to, and still long for, even though I know I’m stuck here for at least 14 more years. I can deal with the frigid temperatures. The snow, not so much. And yes, I know, I moved here, I should’ve expected this, I should just suck it up, it could be worse, blah blah blah. I did not anticipate it would have this much of an effect on my seasonal depression, though. Nor did I expect it would cause the occasional panic attack. But whatever.

And while I skipped Tuesday morning, I did make it a point to drag my depressed behind out of bed to work out Wednesday. I’m down a pound as of Tuesday’s weigh-in, so I’d like to keep that streak going. Plus, the exercise will help my SAD as well as the Vitamin D supplement. Sleep would help a lot too, and up until Thursday night, I was getting plenty of it. For whatever reason, I could not fall asleep that night, and it felt like all I did was toss from one side to the other. I don’t know what my problem was. But that meant no cooking Friday night, as I tend to have disasters when I’m exhausted.

I decided that I wanted chicken of some sort for tonight’s dinner. We haven’t really had any since some I had last week apparently went bad and started stinking up the fridge. I picked up more when I went grocery shopping yesterday, and made this:

Baked Chicken with Potatoes.


Baked Chicken with Potatoes

Ingredients

  • 1 1/2 lbs. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 1/2 lbs. Yukon Gold potatoes, diced (peeling is optional)
  • 3/4 C chicken broth
  • 1 tsp. dried thyme
  • 1 tsp. onion powder
  • 1 Tbsp. olive oil
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • Cooking spray

Instructions

  1. Preheat oven to 350 degrees F. Coat a 9X13-inch baking dish with cooking spray and set aside.
  2. Either in the baking dish or a large mixing bowl, combine all the ingredients together, and mix well.
  3. Bake, covered, for 30 minutes, then uncover and cook 30 minutes more.

Notes

Use a shallow baking dish--A deeper dish will not cook the potatoes thoroughly. And make sure to cover the dish tightly.

I gave the bambino and Jay the option of this or another chicken meal, from Weight Watchers (for anyone interested, this is 6 PointsPlus for the chicken and potatoes). The bambino decided he wanted this. I did some green beans for the side that I just sautéed with some olive oil, then splashed with some lemon juice and sprinkled with some almonds.

In other weekend stuff, we made it out to the Hobo Day parade.

It was COLD this year! Last year, it was nice but gloomy. This year, at least it was sunny, even if it was chilly. Oh, and sorry Mom, no pictures of your man John Thune this time around. He came a little too close and I was afraid I might have to shake his hand for a minute. I also have a LOT of baking to start on for this coming week. I’m even going to attempt to decorate a cake for the first time-As in seriously decorate and not just slop frosting on it. Fingers crossed that goes well!

      • OMG, 10 pounds is great! I can't wait to get to the 10 pound mark. Hey, have you done the point count for this recipe, it looks good and easy. I was thinking you could have a cup of chicken and a cup of potatoes, for maybe 4 for the chicken and 6 for the potatoes??
        • After today, I've got about 1 1/2 lbs. to go before I hit 10 lbs., but if I stay on track for all of next week, I'll maybe make it! :) As for the recipe, it makes 6 servings and each serving is 6 points. The coworker I got it from does a lot with the eTools and Recipe Builder. She gave me another recipe for chicken alfredo lasagne roll-ups that I want to make, maybe this weekend. Those are 9 points/each though!
