Man…It’s only Tuesday. That realization hit me like a ton of bricks around 3 this afternoon. Ugh! But it could be worse…It could still be Monday!
I had a pound of ground beef thawed that I needed to find something to do with. I don’t know what it is about ground beef, but other than meatloaf or burgers, I always struggle to find something to do with it. I almost never have tortillas, so that rules out anything like enchiladas. Meatballs usually take too long (or require more effort than I’m willing to exert!). So I started looking online and found a recipe for something called Ground Beef & Biscuits. It looked good enough, but I made a few changes based on what I had in the pantry.
And I came up with BBQ Beef & Biscuit Bake. It turned out more like a pot pie, but that’s okay. It was good. Good enough that Jay polished off about half of it and kept telling me how delicious it was!
Yeah, I know. That kind of looks like puke on a plate. Trust me, though, it tasted WAY better than it looked! I almost never have refrigerated biscuits, so I made my own, using the recipe in my Williams-Sonoma American Cookbook. Without even realizing it, I’d shaped them to fit the casserole I used. Which is nothing amazing…Just one of those funny little coincidences that made me go “Huh.”
I did also make my own BBQ sauce, and I think I might’ve used a little too much vinegar–The bambino made a face when he first tried it, but I thought it was just tangy enough. I just wish now I had something for dessert…!
