I had some extra mashed potatoes leftover from the other evening, and after seeing a commercial for Taco John’s and their breakfast burritos, I wanted to somehow incorporate the potatoes into breakfast burritos or tacos. I decided instead to make Potato, Bacon & Cheese Taquitos.

I am making a concerted effort to eat a little better right now–Friday afternoon I got more test results back, and they were a bit of a kick in the teeth. I didn’t realize my EKG would be sent off to be looked at by the cardiology department, and there are borderline signs that the left side of my heart may be enlarged. I flipped out–Not that I expected I would drop dead at any second, but at the same time, that’s kind of what you think when you’re told you might have a problem with your heart. Or at least I did. So I spent Friday evening working on a meal plan for this next week, since I’m not really sure how much exercising I can/should do right now. Jay did point out that if it was something truly serious, they’d have me in the hospital already, so at the very least, I could probably still hop on the elliptical. However, I don’t want to do anything until I know for sure what I’m dealing with. Diet is the easiest thing to control for right now.
But back to breakfast…I realize bacon isn’t the healthiest thing in the world, but there’s not too much in these, and I went with the lower-sodium variety. I also didn’t use as much cheese as I normally would on something like this. They’re good for a decent breakfast snack.
I totally could’ve eaten all eight of these on my own. Even the bambino liked them, and he’s in that phase where if it’s not PB&J, he wants nothing to do with it! I suddenly got very depressed after checking the weather for next week. SIX inches of snow between Tuesday and Wednesday?! Really? We just had all the snow in our yard finally finish melting yesterday! And it especially sucks because Jay has to work early all next week, which means I’m on my own in the mornings. Bah! I hate April. I hate winter.
