FINALLY!!!! We’re back to where we were basically at the end of March/beginning of April:
Spring came back to South Dakota!
I’m feeling MUCH better than I was earlier in the week. The SAD was kind of kicking my butt, to the point that I spent a couple evenings either mad at the world or in tears. I tell ya, depression sucks. Big time. I should’ve made more of an effort to take my Vitamin D this long, drawn-out, never-ending winter.
To celebrate the weekend, I channeled my new-found energy into projects of the domestic sort. I made scads of stuff (more to come), cleaned some of the house up–Even rearranging the dining room a bit (if you know me, you know rearranging furniture is my worst nightmare…I have to leave the house whenever Jay decides he wants to change things up)!
And I made myself some breakfast for the next week:
Maple Walnut Dark Chocolate Quinoa Granola.
Inspired by How Sweet Eats, I made up a big batch of quinoa to use in the granola as well as my lunch for next week. The granola was project number one.
I went with maple syrup instead of honey, because I don’t care for honey. I am trying to get over my aversion to honey, but I can’t. At least not yet.
I’m kind of excited for breakfast tomorrow.
