Cinnamon Vanilla Chocolate Chip Cookies

I’ve been in a mood to bake, but I wanted to take a break from all the cupcakes I’ve been doing lately. So, I decided to make cookies. I had a bag of mini chocolate chips hanging around…I don’t remember why I bought them, but I figured they would work just as well if I were to make chocolate chip cookies.

Cinnamon Vanilla Chocolate Chip Cookies. I wanted something a little different than just your basic back-of-the-Nestle-Chocolate-Chip-bag cookies, although this recipe is rather similar.

Ingredients

  • 2 1/4 C flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 C unsalted butter (2 sticks), room temperature
  • 3/4 C white sugar
  • 3/4 C packed brown sugar
  • 2 Tbsp vanilla bean paste
  • 2 eggs
  • 1 12-oz. package of mini semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 375 degrees F. Line 2 or 3 baking sheets with parchment paper and set aside.
  2. In a small mixing bowl, whisk together the flour, baking soda, salt and cinnamon.
  3. In the bowl of a stand mixer, cream together the butter, sugars, and the vanilla bean paste until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. With the mixer on low, slowly add the flour mixture. Once added, using a wooden spoon, stir in the chocolate chips.
  5. Drop by tablespoons onto the prepared baking sheets, and bake for 9-10 minutes.
  6. Cool on baking sheet for 2-3 minutes, then cool completely on wire racks.

If I had the time/energy/extra chocolate chips, I would redo these again, just because they don’t quite have the vanilla flavor I was hoping for. There’s a hint from the extra vanilla bean paste, but mostly they taste like slightly sweeter cinnamon chocolate chip cookies. I might try them again and add some vanilla extract on top of the vanilla bean paste…Or I’ll do what I like to do, and research the issue. Still, I’m not one to turn down a chewy chocolate chip cookie!

It’s a good thing there are a lot of them. I will be snacking on these for awhile…Although if they last the week, I’ll be surprised!
