I’ve been in a mood to bake, but I wanted to take a break from all the cupcakes I’ve been doing lately. So, I decided to make cookies. I had a bag of mini chocolate chips hanging around…I don’t remember why I bought them, but I figured they would work just as well if I were to make chocolate chip cookies.
Cinnamon Vanilla Chocolate Chip Cookies. I wanted something a little different than just your basic back-of-the-Nestle-Chocolate-Chip-bag cookies, although this recipe is rather similar.
If I had the time/energy/extra chocolate chips, I would redo these again, just because they don’t quite have the vanilla flavor I was hoping for. There’s a hint from the extra vanilla bean paste, but mostly they taste like slightly sweeter cinnamon chocolate chip cookies. I might try them again and add some vanilla extract on top of the vanilla bean paste…Or I’ll do what I like to do, and research the issue. Still, I’m not one to turn down a chewy chocolate chip cookie!
It’s a good thing there are a lot of them. I will be snacking on these for awhile…Although if they last the week, I’ll be surprised!
