For some reason, I haven’t been buying a lot of pork lately. Which is too bad for Jay, as he’s kind of like Homer Simpson with his love of pork. He’d eat it everyday if I let him. I can’t judge–I’m that way when it comes to chicken. I’d eat that for the rest of my life if I could. But we’ve been eating a lot of chicken as of late, so I thought these Baked Balsamic Pork Chops would be a nice change.
They are heavy on the garlic, which the bambino did not care for, but Jay and I really liked. I also liked that these are super-easy to make. Toss them in the oven after pouring the balsamic mixture over them and 20-25 minutes later, they’re done!
I kid you not, it took me longer to peel and mash potatoes and to sauté those green beans than it did to put the pork chops together.
Preheat the oven to 400 degrees F. Spray a baking dish with cooking spray and set aside.
Season both sides of the pork chops with salt and pepper, then place in the baking dish.
In a small bowl, whisk together the garlic, balsamic vinegar, and olive oil. Season with salt and pepper.
Pour the mixture over the pork chops, turning the chops to coat. Bake in the oven for 20-25 minutes or until cooked through. Turn the chops over halfway through cooking. Serve with the extra balsamic sauce, if desired.
