Cranberry Lemon Mini Muffins

It’s been a long time since I’ve made mini muffins or mini cupcakes. They’re cute, but they’re a big pain in the backside to make. When I first bought a mini muffin pan, I picked up one with only a dozen wells…And then decided it was a good idea to make mini Red Velvet Cupcakes. I think it took me well over 3 hours to make them all. I’ve since added a 2-dozen well mini muffin pan to my collection, so it doesn’t take that long now if I need to make something like these Cranberry Lemon Mini Muffins.

These were actually for a friend–Her department was doing a holiday potluck, and she asked if I minded baking for her. I did not, and asked if she minded me trying my hand at these Cranberry Lemon Mini Muffins, though she’s the one who asked that they be mini, rather than regular-sized.

I had a little help in making these from Hamilton Beach.

I was sent a Stand Mixer, as well as the 6-Speed Hand Mixer with Snap-On Case. I especially love that the hand mixer comes with the storage case for the attachments.

I don’t know about you, but if I stick mixer attachments in one of my utensil drawers, inevitably one of the pair will disappear right when I need it most. It probably goes off to visit the Land of Socks Lost in the Dryer.

The stand mixer is nice as well, which is what I’m going to focus on for the rest of this post.

It’s small, but a lightweight powerhouse. It utilizes the same mixing action as a Kitchen Aid, which means nothing to me, only because my other stand mixer is another brand. But Kitchen Aid is rather popular, so perhaps that means something to my readers! It also comes with the standard attachments–The paddle, whisk, and dough hook. Which means you can mix up Cranberry Lemon Mini Muffin batter:

And you can whip cream or egg whites for a meringue, as well as knead some bread dough. The bottom of the mixer also has suction cups that help control the inevitable mixer shaking when beating or whipping something on high speeds. The bowl and attachments are also dishwasher-safe (as long as you don’t use the “sanitize” cycle/setting on your dishwasher–The higher temperature can damage the parts).

Ingredients

  • 2 C fresh cranberries
  • 2 C all-purpose flour
  • 1 C sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 C milk
  • 1/4 C (half a stick) unsalted butter
  • 1 Tbsp lemon zest
  • 1/2 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Line the wells of a 24-count mini muffin pan with paper liners and set aside. Preheat the oven to 350 degrees F. Cut cranberries in half, and set aside.
  2. In a small mixing bowl, combine the flour, baking powder, and salt. Whisk to combine and set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, beat the sugar and butter together on medium speed. Add in the milk, lemon zest, vanilla, and the eggs. Mix well.
  4. Add the dry ingredients all at once, and mix on low speed just until combined. Fold in the cranberries.
  5. Using a small (1-Tbsp.) scoop, place the batter in the prepared muffin pan(s). Bake the muffins for 12-15 minutes or until golden brown, and a tester inserted in several muffins comes out clean. Cool for 10 minutes in the pan, then remove and cool completely on wire racks. Serve warm or at room temperature.
