I’ve been unemployed for all of a week now, and the monotonous drudgery is already starting to set in. The good thing is, by the end of this week, my house should probably be completely clean from top to bottom–Just from a lack of things to do. I will say this, we’re not doing without when it comes to food. I’ve been stretching whatever I can, wherever I can. Over-ripe bananas become bread (something I myself won’t touch, but Jay and the bambino will scarf down). Homemade bread instead of store-bought–The bambino prefers the stuff from the store, but I can make a LOT more from scratch for the cost of a few packets of yeast and a 5-lb. bag of flour, compared with what some breads cost these days! And since I’m currently stocked on baking supplies, things like these Salted Caramel White Chocolate Peanut Butter Cookies make a nice after-school snack.
Much as I love chocolate and peanut butter together, there’s something special about white chocolate and peanut butter. If I have an opened bag of white chocolate chips, an opened bag of semi-sweet or milk chocolate chips, and an almost-empty jar of peanut butter, I’m more inclined to mix that peanut butter with the white chocolate chips than the regular chips. I don’t know why.
Over the weekend, we popped over to the grocery store for more milk, as well as some snack items for Jay. We discovered peanut butter was on sale, so we grabbed three jars, one of which was a salted caramel variety. That’s what I used here, but don’t feel like you need to make a special trip to the store for some. Regular peanut butter will make these cookies just as tasty.
But be warned: These little buggers are addicting!
