Now that Thanksgiving is done, it’s time to start thinking about the rest of the holiday season. I’ve come to rather enjoy baking for the holidays, and will sometimes make homemade gifts to send back to family in Ohio. And who doesn’t love holiday cookies? This year I came up with a cookie that is probably my new favorite–Peppermint Bark Chocolate Blossoms.

Chocolate cookies topped with DOVE® Peppermint Bark (Limited Edition – It’s only available for the holiday season). I have to say, I love these cookies. This is coming from someone who normally doesn’t care for peppermint anything, and I ate just as many of these as the rest of my family did!

The cookies take a little while to make, since you have to chill the dough, but it means you can either work on other stuff, or snack on some M&M’S® while you wait! The most time-consuming part is rolling the cookies in sugar before popping them in the oven. Well, that, and waiting for them to cool off enough to sample them!

Peppermint Bark Chocolate Blossoms

Ingredients

  • 2 C all-purpose flour
  • 1/2 C unsweetened cocoa powder
  • 1/2 tsp. salt
  • 1 C (2 sticks) unsalted butter, room temperature
  • 1 1/2 C sugar
  • 2 tsp. peppermint extract
  • 2 large eggs
  • 1/2 C sugar, for rolling
  • approximately 60 DOVE® Peppermint Bark candies, unwrapped

Instructions

  1. Line 3-4 baking sheets with parchment paper and set aside. In a medium mixing bowl, whisk together the flour, cocoa powder, and salt.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium speed for 30 seconds. Add the sugar, and beat on medium-high for 2 minutes. Add the vanilla, and the eggs, one at a time. Beat well after each addition.
  3. On low speed, gradually add the cocoa mixture. Beat until well-combined. Cover, and refrigerate the dough for 45-60 minutes.
  4. While the dough is chilling, preheat the oven to 350 degrees F.
  5. Using a small (1-Tbsp.) scoop, shape the dough into balls, then roll in the 1/2 C sugar to coat. Place on the prepared baking sheets.
  6. Bake for 9-10 minutes or until set. Upon removing from the oven, gently press 1 DOVE® Peppermint Bark candy into the center of each cookie.
  7. Cool for 2 minutes on the baking sheets, then remove and cool completely on wire racks.

Notes

*The DOVE® Peppermint Bark candies will melt slightly from the heat of the cookies right from the oven. Allow the chocolate to firm up before storing the cookies in an airtight container.
