Springtime in South Dakota can mean crazy weather. A couple weeks ago, it was rainy and chilly. Last week, we had snow. This week, it’s sunny and in the 70s. I would like to think that now we’re into May, the weather will level off a bit, and we’ll have a decent spring for a couple weeks.
Spring means open windows, airing out the house, and fun treats, like this Salted Carmel Pretzel Chocolate Cake. This easy-to-make cake is made with some help from Blue Bunny® and their new line of Bunny Snacks™.
This year Blue Bunny® also introduced a totally new treat, Bunny Snacks™. I chose to incorporate the Salted Caramel Pretzel Bunny Snacks™ into my cake recipe. This is a three-ingredient recipe, believe it or not–Four, if you count the baking spray. This is a doctored cake mix, with melted ice cream, and eggs. The melted ice cream contains your liquids for your cake mix, so all you need to add are the eggs! I started by heading to my local Walmart, which carries Blue Bunny® products, nationwide:
You mix your eggs, cake mix, and two cups of melted ice cream (I needed the whole package of Salted Caramel Pretzel snacks).
Once mixed, add it to a 10-cup tube pan:
And then bake according to the package directions. I decided to keep with the salted caramel theme, and topped the cake with an equally-easy-to-make salted caramel glaze.
The cake is perfect for feeding a crowd, as well as celebrating spring!
