I crack myself up sometimes. Here I was ready to throw in the towel with regards to blogging, and I almost feel like I’m back, so to speak. I’ve got a couple recipes waiting in the wings, I feel energized again about cooking, and I’ve even got a giveaway coming soon! I guess maybe it was being ready to let it go that made me realize I don’t want to? I have no idea.

But I’ve been cooking and photographing, even if I haven’t settled in to write as frequently as I should. These Peanut Butter Toffee Bars were the result of me buying some ingredients a couple weeks ago, but only now feeling the desire to get to work in the kitchen. I was craving something with peanut butter and toffee chips, but didn’t want cookies. I also wanted something that wasn’t going to take forever or be too complicated.

These bars were the answer. The original recipe I came across uses a boxed cake mix. I’m not completely opposed to them, but I almost never buy them. So I made a homemade version, using a peanut butter cake recipe I already had!

I loved them, Jay and the bambino loved them, and surprisingly, we still have a few left, thought I predict they’ll be finished off within the next two days or so.

Ingredients

  • 2 C all-purpose flour
  • 1 C packed dark brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 C milk
  • 1/2 C crunchy peanut butter
  • 2 large eggs
  • 1/4 C (4 Tbsp.) unsalted butter, room temperature
  • 1 8-oz. bag chocolate toffee bits
  • 1 12-oz. bag milk chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 15x10x1-inch pan with baking spray and set aside.
  2. In a large mixing bowl, whisk together flour, brown sugar, baking powder, baking soda, and salt. Add in the milk, peanut butter, eggs, and butter. Beat on low speed with an electric mixer until combined. Beat on high speed for 3 minutes. Fold in the toffee bits.
  3. Spread the batter in the prepared pan. Bake for 20-25 minutes, or until a tester inserted in the center comes out clean.
  4. Immediately upon removing from the oven, sprinkle the chocolate chips over top of the cake. Let them sit for 5 minutes then spread the melted chocolate over top of the cake with an offset spatula. Allow the chocolate to set before cutting into bars.
