I suspect the bambino is going through a growth spurt these days. He’s complaining of being tired, and he’s actually eating. I made these Maple Almond Butter Muffins, and not only did he like them, he ate two in a row! That doesn’t happen unless he’s about grow an inch or two.
I saw the recipe on the Siggi’s website, and thought they’d be good for the weekend. Something a little healthier to snack on than chips or whatever other junk we could find. I wasn’t expecting that the bambino would claim them the best muffins ever.
They are rather filling, too, which is something you don’t often expect with a muffin. I’m sharing this today, because I’ve recently been accepted as a member of the Siggi’s Culture Club! I think it’s been about a year since I first saw Siggi’s at Hy-Vee, and gave them a try. What intrigued me about them is that most of their yogurts contain 5 ingredients or less. And their sugar content is a lot lower than most other yogurts out there. I won’t eat “conventional” yogurt any more…It’s too thin and too sweet (well, the fruit flavors are, anyway). Siggi’s also doesn’t have as pronounced of a “tang” as a lot of the fat-free, Greek-style yogurts do–Something my palate rather appreciates.
- ½ C whole wheat flour
- ½ C all-purpose flour
- ¼ C flax meal
- 2 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ¼ C almond milk
- ¾ C almond butter
- ¼ C maple syrup (NOT pancake syrup)
- 2 Tbsp. brown sugar
- 1 large egg
- 2 tsp. vanilla extract
- ¾ C Siggi's Vanilla Skyr
- Preheat the oven to 400 degrees F. Grease a muffin tin with cooking spray or butter and set aside.
- In a large mixing bowl, whisk together the flours, flax meal, baking powder, baking soda and salt.
- In another bowl, whisk together the almond milk, almond butter, maple syrup, brown sugar, vanilla and Skyr.
- Pour the wet ingredients into the dry, and mix until combined, being careful not to overmix.
- Using a large (3-Tbsp.) scoop, fill the muffin wells ¾ full. Bake 20-25 minutes or until golden brown, and a toothpick inserted in the center comes out clean. Cool five minutes in the pan, then remove the muffins and cool on a wire rack.
These are a good breakfast as well as a good snack.
