Maple Almond Butter Muffins

I suspect the bambino is going through a growth spurt these days. He’s complaining of being tired, and he’s actually eating. I made these Maple Almond Butter Muffins, and not only did he like them, he ate two in a row! That doesn’t happen unless he’s about grow an inch or two.

Maple Almond Butter Muffins - TramplingroseI saw the recipe on the Siggi’s website, and thought they’d be good for the weekend. Something a little healthier to snack on than chips or whatever other junk we could find. I wasn’t expecting that the bambino would claim them the best muffins ever.

Maple Almond Butter Muffins - TramplingroseThey are rather filling, too, which is something you don’t often expect with a muffin. I’m sharing this today, because I’ve recently been accepted as a member of the Siggi’s Culture Club! I think it’s been about a year since I first saw Siggi’s at Hy-Vee, and gave them a try. What intrigued me about them is that most of their yogurts contain 5 ingredients or less. And their sugar content is a lot lower than most other yogurts out there. I won’t eat “conventional” yogurt any more…It’s too thin and too sweet (well, the fruit flavors are, anyway). Siggi’s also doesn’t have as pronounced of a “tang” as a lot of the fat-free, Greek-style yogurts do–Something my palate rather appreciates.

Recipe type: Breakfast
Serves: 12
Ingredients
  • ½ C whole wheat flour
  • ½ C all-purpose flour
  • ¼ C flax meal
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ¼ C almond milk
  • ¾ C almond butter
  • ¼ C maple syrup (NOT pancake syrup)
  • 2 Tbsp. brown sugar
  • 1 large egg
  • 2 tsp. vanilla extract
  • ¾ C Siggi's Vanilla Skyr
Instructions
  1. Preheat the oven to 400 degrees F. Grease a muffin tin with cooking spray or butter and set aside.
  2. In a large mixing bowl, whisk together the flours, flax meal, baking powder, baking soda and salt.
  3. In another bowl, whisk together the almond milk, almond butter, maple syrup, brown sugar, vanilla and Skyr.
  4. Pour the wet ingredients into the dry, and mix until combined, being careful not to overmix.
  5. Using a large (3-Tbsp.) scoop, fill the muffin wells ¾ full. Bake 20-25 minutes or until golden brown, and a toothpick inserted in the center comes out clean. Cool five minutes in the pan, then remove the muffins and cool on a wire rack.

These are a good breakfast as well as a good snack.

Maple Almond Butter Muffins - TramplingroseHave you tried Siggi’s before? Would you like to? As part of my membership in the Culture Club (which, let’s be honest, I love the name both because it’s funny in its reference to yogurt cultures, but also because it makes me think of the band Culture Club, and I am a child of the 80’s), I’ve got LOADS of coupons to help spread the word about Siggi’s. I’m going to give away 10 $1.00-off coupons, as well as 5 gift certificates.

Siggi's CouponsIf your grocery store is anything like the Brookings Hy-Vee, Siggi’s is almost $2.00/cup, but y’know, I have certain items I’m willing to splurge on. I’ve said many times, I don’t mind paying for quality. The $1.00-off coupons can be used on any of the Siggi’s products, the gift certificates are for free 5.3-oz. cups of yogurt. It’s almost $20 worth of cultured goodness.

How to enter? Visit the Siggi’s website, and leave a comment telling me either which flavor of yogurt you’d like to try (my personal favorite is the strawberry), or which of their recipes you’d like to make. I think soon I’m going to try the Skyr Biscuits, because you know me and breakfast. The giveaway will run until 9:00 AM CST on March 9th, and the winner will be chosen using a random number generator. The chosen winner will have 48 hours to respond, otherwise a new winner will be chosen. So visit Siggi’s and start making your list of what you’re going to try! If your grocery store doesn’t carry Siggi’s, they even have a request form you can give to your store manager.

DISCLOSURE: I am a member of the Siggi’s Culture Club, and was provided the information as well as the coupons to give away. All opinions are my own–I think they make a fantastic product and am happy to help spread the word about them!

  1. The vanilla looks yummy! Love that the grams of sugar are so low even for the flavored yogurts!
