1 1/2 C diced, fully-cooked ham
6 oz. fat-free Greek yogurt (Fage or Chobani)
6-8 crushed saltines
1/4 C shredded mozzarella
2 Tbsp. butter, melted
6 large eggs
Grease an 8×8-inch baking dish. In a large mixing bowl, combine the first six ingredients. In a small mixing bowl, whisk the eggs until thickened and lemon-colored, about 3 minutes. Fold the eggs into the ham mixture, then transfer to the baking dish. Bake for 25-30 minutes, or until a knife inserted in the center comes out clean. Let stand for 5 minutes before serving.
