1 C whole wheat pastry flour
1/4 C all-purpose flour + 2 Tbsp.
6 Tbsp. water
1/3 C shortening
12 oz. lean ground beef
1 Tbsp. onion powder
2 Tbsp. Worcestershire sauce
1 clove garlic, minced
2 egg whites
1/2 C shredded Cheddar or Co-Jack cheese
2 Tbsp. Parmesan cheese, shredded or grated
Preheat oven to 375°F. For pie crust, cut shortening & flour in a medium bowl, until mixture resembles crumbs. Add 1 Tbsp. of water at a time, and using a fork, mix with flour. When all the water has been added, shape dough into a ball, then turn out onto a floured surface. Roll out into a 12-in. diameter circle. Ease into pie plate, and crimp edges as desired.
Combine onion (or onion powder), ground beef, Worcestershire sauce, and garlic in a large skillet; cook over medium-high heat until meat is browned, 4-6 minutes. Stir in 2 Tbsp. of flour, then remove from heat & let cool slightly.
Mix eggs, egg whites & cheeses in a small bowl. Spoon the beef mixture evenly over pie crust, then top evenly with the egg & cheese mixture. Bake until filling is set and crust is golden, 30 minutes. Let stand 10 minutes before cutting into wedges.
