Lemon Thyme Chicken

(From the Taste of Home Comfort Food Diet Cookbook)

Serves 4

Ingredients:

3 Tbsp A/P flour
1/2 tsp salt
1/4 tsp pepper
4 boneless, skinless chicken breasts
2 tsp olive oil
2 tsp onion powder
1 Tbsp butter
1/2 tsp dried thyme
1 C chicken broth
3 Tbsp lemon juice

Directions:

1. In a small bowl, combine the flour, salt and pepper. Reserve 4 1/2 tsp for sauce. Dust the chicken breasts on both sides with the rest of the flour mixture. In a large non-stick skillet, heat the oil over medium, and cook the chicken 8-10 minutes per side. Remove from the skillet and keep warm.

2. Melt the butter in the skillet. Deglaze the pan with the lemon juice, scraping up any browned bits. Sprinkle the reserved flour and thyme, and cook 30-45 seconds. Gradually whisk in chicken broth, and bring mixture to a boil. Cook for 1-2 minutes, until thickened. Serve over chicken.
