From The North End Italian Cookbook, 5th Ed
2 lbs. potatoes, cut into large chunks
4 Tbsp. olive oil
3 garlic cloves, minced
1 Tbsp. tomato paste
salt & pepper to taste
oregano, 1/8 tsp.
Heat the oil in a large skillet. Add the garlic and cook over medium heat, being careful not to cook too quickly & burn. Add the tomato paste, and stir. Cook 3-4 minutes, until well-blended. Add the potatoes, and toss well to coat. Add salt, pepper, and the oregano. Lower heat, cover, and cook 20-25 minutes, or until potatoes are cooked though and soft, but not mushy.
