(Slightly Adapted from the Taste of Home Comfort Food Diet Cookbook )
- 1/4 C + 2 Tbsp. low-fat or fat-free milk
- 1/4 C rolled oats
- 1 1/2 tsp. onion powder
- 1/2 tsp. salt
- 1 lb. lean ground beef
- 1 tsp. cornstarch
- 1 C tomato sauce
- 1 tsp. Italian seasoning
- 1/2 C cold water
1. In a mixing bowl, combine the milk, oats, onion powder, salt, and ground beef. Mix well, then shape into 4 loaves.
2. In a 10-inch skillet, brown the loaves on top and bottom, then drain off any grease, and return the loaves to the skillet. In a small bowl, combine the cornstarch, tomato sauce, Italian seasoning, and water, mixing until smooth. Pour over the loaves. Bring to a boil, then reduce heat to medium-low. Cover and cook for 15-20 minutes or until meat is no longer pink in the middle.
