“Someone’s got a case of the Mondays.”

I was somewhat lazy yesterday. I never got around to doing the laundry, for one. I’m working on that at the moment–I’ve got a load in the dryer right now, and I figure that I can finish it up either tomorrow or Wednesday. I am getting a haircut tomorrow evening, which will be nice. The last time I got one, I was sick as a dog, and didn’t really relax or enjoy it.

Instead of laundry yesterday, I did do a fair amount of cooking. I made up a cream cheese dip for the fruit we bought on Saturday. I also cooked up some sausage for the pizzas I made last night. I don’t think I’m going to be buying Johnsonville sausage anymore. Just out of curiosity, I flipped the package over to see what all the ingredients were:

Corn syrup? Really? In sausage? Unless it’s supposed to be maple-flavored or something, why does there need to be sugar in sausage?! For awhile, the Brookings Hy-Vee was carrying Organic Prairie’s Italian Sausage, but after poking around on their website, it appears they no longer make it. Which is too bad. I guess maybe I’ll be getting any future Italian sausage from the meat counter instead.

But all in all, the pizza turned out fine:

And it made for some tasty leftovers in my lunch too. I had a repeat of last night’s dinner this afternoon, between the pizza and the fruit:

There was enough fruit that I’ll be eating it for tomorrow’s lunch as well.

For tonight’s dinner, I made Maple-Glazed Pork Chops.

My mom made a pork roast a couple weeks ago with this recipe, and I asked her to send it to me after she told me about it. I’m assuming that because I used pork chops instead of a pork loin, the glaze was a little thin. I decided that I’ll just reduce it a bit the next time I make these, which I will again, because they were a hit not only with me, but with my two guys. Even the bambino asked for “sauce” on his pork & rice. And because the pork chops were about 2 inches thick, there are LOTS of leftovers for tomorrow.

While they were cooking, I broke down and had a snack while I prepped:

I got this sample in today’s mail from the fine people at Sahale, and boy were they tasty! The heat from the chili doesn’t kick in right away, but it’s not overwhelming or anything. I’m hoping to find them in SoDak sooner rather than later (or Sahale could just send me more–I’d be fine with that too!).

I got up and did 30 minutes on the elliptical this morning, and I’d like to do that again tomorrow, so I guess I best be off to put away the laundry and get myself to bed!

    • I really wish sometimes I was more of a tech-tard or scientifically minded, because I would invent self-cleaning clothes, and I could retire at 35.
