I think I’m only going to have to go into work early one more day, and good lord willing, I hopefully won’t have to stay late tomorrow night. The OT will be nice, but I am POOPED! And it’s only Wednesday…I still have 2 1/2 days left to go.
I’ve been meaning to make Beef Paprika for the past couple nights, but just haven’t found the time to do it. Last night I made breakfast for dinner:
I like Mr. Dell’s because their ingredient list is short & to the point: Potatoes. That’s it. I also fixed some sausage for Jay & the bambino:
I daresay Jones has replaced Bob Evans as my favorite breakfast sausage, although I am happy that Hy-Vee carries Bob Evans sausage, if I ever need a taste of home. Tonight’s meal was another raiding of the pantry.
Jay asked what I was planning on making, and I said that I was thinking about pizza burgers. They’d’ve been even better if I’d had Texas toast or garlic bread, instead of just regular bread, but they were still good. I ended up making the pizza sauce, since I didn’t have any marinara or pasta sauce on-hand (it’s simply an 8 oz. can of tomato sauce, 2 cloves of minced garlic, a Tbsp. each of dried basil & onion powder, a tsp. each of oregano & sugar, and pepper to taste. You could substitute a 1/4 C of diced onion instead of onion powder, but since I don’t like the texture of onions, I use onion powder. Bring it to a boil, then reduce heat to low until you’re ready to use it). While that was cooking, I fried the burgers, and heated up the broiler. Then I started my assembly:
I should’ve left them under for a few more minutes, but I was starving by the time I got home from work, and I wanted to eat as soon as possible. And while they would’ve been better with something other than wheat bread, they were good, and I’ll make them again…The next time I have to come up with a quick dinner idea!
