Oh, I was in a FOUL mood yesterday…I’m still slightly cranky today, but for some different reasons. There was a bit of a weird vibe going on yesterday, and once we finally got home from running errands (getting the bambino’s Halloween costume–He’s going to be Batman again this year) & eating dinner (we popped into Nick’s b/c I was craving junk food, and Jay is more likely to eat there than he is to swing through Culver’s or elsewhere!), I remembered that I had kind of promised Custard Buttons to a few people at work. I decided to double the recipe, but in the end, I’ve opted not to take them into work & share with the whole department…Just a select few people.
I got started with the dough first. I should realize one of these days that sometimes that’s biting off more than I can chew, especially without a stand mixer. On the one hand, I kind of like doing things like this by hand–We never had anything more than hand mixers when I was growing up, and that’s still all my mom uses today when she bakes. I don’t know if my sister Shelley has a stand mixer, but my brother-in-law Don bought my sister Kendra one as a wedding gift. I wasn’t jealous then, but the more baking I do, the greener with envy I become! My issue was that in doubling the recipe for the dough, it was a little difficult to get incorporated. I ended up using 3 eggs instead of 2, and about 1 or 2 teaspoons of half & half to try to get it to work.
I skipped the step in Marie’s recipe where she says to roll the dough into a ball before pressing down on it with fork tines…I thought maybe my cookie scoop would work well enough. And that is why mine are uglier than hers are! However, they are quite tasty, especially with the custard filling:
I love shortbread, and that’s what these cookies remind me of. Very flaky & crumbly. And the custard powder is pretty tasty too! They’d probably be pretty awesome with a cup of good tea. And because it is now time for me to get myself ready for work on this last day before my long weekend, I’m off!
