Two-Meeting Tuesday

I’m so glad today’s over. I spent most of the afternoon in meetings, which is nice for a break away from my desk, but it’s also kind of annoying because I don’t feel like I got much done! And we have a holiday this week too, but I’m okay with that.

I’m planning on spending that day grocery shopping and cleaning the house, before my party on Saturday. I’ve got the menu all figured out, I just need to get my ingredients and get my house cleaned!

I got started on dinner rather late this evening. Right after work, we popped up to check on our family portraits and order the prints we wanted. I’m excited to get them. The ones of the bambino turned out REALLY well, and we had a really hard time settling on his individual pictures.

But because I’ve put it off long enough, I busted this out:


Yep. Cauliflower. This is how lame I am: I had to look up online exactly how to separate the florets!

Pathetic, I know. I got about a quarter of that head separated and tossed with some seasoning salt and olive oil.


I made roasted potatoes to go along with the cauliflower, in case no one but Jay liked it.


I had chicken to go along with the veggies. I only had two breasts, so I cut them each in half and pounded them out:


I really like the weight of my meat pounder (that sounds a bit rude, doesn’t it?):


I believe I got this with wedding money. It’s come in handy over the years.

And once the veggies were done, I plated everything.




And the verdict? I did not hate the cauliflower. I liked it better than the green beans, if you can believe that. However, I wasn’t exactly thrilled by the texture.

I’ll maybe give it a try again, but I think my next experiment will be to add it to mashed potatoes. I think that might go over a little better!
