Breakfast for dinner

I took some chicken out to thaw, but not surprisingly, it’s still slightly frozen. And since I copped out & ordered pizza last night, I needed to find something for dinner tonight. At the last possible second, I decided on pancakes. And because I opted for pancakes, I got to use another one of my spices from Spices Inc.

I opened the nutmeg this evening. I sometimes think nutmeg is too strong, but I wonder if that’s because I usually have crappy store-bought stuff on my shelf. This stuff was warm, not overwhelming. The cinnamon & vanilla are my usual additions whenever I make pancakes or French toast.

Just for a change, I also got out a couple different toppings instead of the usual butter & syrup:

Can I just say how much I loathe the lighting in my dining room? Yes, I know there are photography tricks I could do to make it not so horrible, but to be honest, I forgot about taking pictures until I was almost done eating!

Oh well. Sometimes I’m a lot better about my food photography.

And sometimes I’m a lot better about remembering to take things out of the freezer–I finally remembered to take out the turkey breast for Thanksgiving dinner. Luckily it’s just the 3 of us, and dinner will be at the usual time (anywhere between 6 and 6:30). I’m thinking I might go ahead and make the pumpkin pie tomorrow night. The rest of the meal will be easy enough–Mashed potatoes, stuffing, green beans, & the cranberry sauce. And of course, the turkey. In between all that, we’ll set up and decorate the Christmas tree. Now, just to get through one more day of work…!
