I do like bankers’ hours and holidays. While the upcoming work week will be pretty stressful, it probably won’t be as bad as my brain is already imagining it to be! Because the bambino & I are home today while Jay’s off at work, I asked if he wanted to help me bake some stuff. He told me he was only interested in baking cookies. I, on the other hand, wanted to make something else.
A few weeks ago, I came across a recipe on the How-to Baker’s website for some homemade Parmesan Cheez-its. I didn’t have parm, and I love original Cheez-its, so I used cheddar. And while the recipe calls for using a food processor, I don’t have one, so I made my dough the old-school way:
It puffed up more than I was expecting–I’m thinking the next time I make these (and I will make them again soon), I might score them a bit more, and I’ll probably prick them too. Despite that, they are tasty, and the bambino & I have been munching on them since they came out of the oven!
