Twice in one day!

Now that the evening’s upon me, I am filled with the inevitable dread of having to go back to work tomorrow after a nice 3-day weekend. The bambino & I had a nice day home together. After the attempt at Cheez-Its, I made something I knew I couldn’t screw up. Cookies. Peanut Butter Chocolate Chip Cookies.

And it was nice that the bambino actually helped this time–He was pretty excited about it, especially once they were done and he could eat them.

Just as they were about done cooling, Jay came home. After he sampled a couple cookies, we went to run a couple errands.

And after we got back home, I got to work on dinner. Tonight was the 1-Dish Taco Bake.

If you pop over to check out the recipe, you’ll notice mine looks NOTHING at all like the picture on the Breadworld website.

For one, my slices always fall apart. For another, I don’t put the salsa on there, only because I know the bambino won’t eat it (too ‘picy)…And I have the issue with chunky salsas. But it’s still tasty.

This was one of the first meals I made after we moved into the house, so it’s got some nostalgia for me. And it’s been quite awhile since I’ve made it. I’ve got leftovers for lunch tomorrow, which is already packed, the coffeemaker is set to begin brewing at 5:30, and the only other thing I need to do in the morning (after working out), is gather up a bunch of extra clothes and underpants for the bambino! With that, I’m off to bed!

  1. Two baking experiments and posts in one day! Very impressive work for you and the bambino. I love both! And you cooked dinner on top of that. Sigh. I have to return to work tomorrow too. Glad you and the bambino got a day to work in the kitchen and run errands. Those cookies looks so good!

    • Thanks for stopping by! I like holidays where it’s just my little boy & I, so we get some one-on-one time together. And he gets so excited to tell his dad all about what we baked or cooked, it’s so cute! Plus, I’d rather spend a day “working” in my kitchen than being at work–Much more fun, with more delicious results! :)
