“The color of the sky as far as I can see is coal grey…”

It’s another crappy rainy day, and the lack of sunshine is beginning to affect my mood once again.



When I took these pictures, it was just raining. Now there’s a dusting of snow on the grass. Bah! Winter obviously didn’t get the memo that Spring started a month ago.

I skipped Sunday dinner this afternoon with Jay’s family. My ribs are hurting a little more today than they were yesterday, and I’m tired from my long week at work. When they returned, Jay & the bambino gave me these:

The bambino picked them out by himself. They’re so pretty.

I’d already started on dinner when they walked in–Shredded Beef Chimichangas. I was looking for random recipes a couple weeks ago, and came across this one, and have been itching to make it since. Today was the perfect day for something warm & comforting.


I didn’t bother taking pictures of the chuck roast while it was cooking, but let me tell you, my kitchen smelled so good, I wanted to eat the walls!


I actually can’t wait to make this again some time soon, and while the recipe says it only makes 4 chimis, I suppose I skimped on the filling, and got 6, so I’d have some leftovers for lunches tomorrow and Tuesday. I also used my Uncle Ben’s Whole Grain White Rice that Foodbuzz sent me as part of the Tastemakers Program.


The bambino really likes rice, and I figured it would pair decently enough with the chimis. I wasn’t really thrilled by this stuff, I have to say. The water didn’t really absorb as much as I’d’ve liked, and the rice wasn’t “fluffy.” No matter…The bambino scarfed it up, and that’s really all that counts.


And no, that’s not ketchup on them, it’s taco sauce. I don’t do chunky salsas, and until I get myself a large food processor, I can’t really make my own. They were good. I was only going to eat one of them, and set the other aside for another lunch, but I ate them both.

When we were out & about yesterday afternoon, I came across the hand mixer I think I want to buy:

  1. I was just going to tell you that I saw a Hamilton Beach hand mixer on sale for $16 at Target this week. I don’t think its this particular one though. I figured even you should have a Target somewhere near you in the boonies. :) Also – do you have a Bed, Bath & Beyond nearby? They have everything and almost always send out 20% off coupons in you put in your email address on their website. I’d like to see you get back to your baking? :)

    • I know!!! I’m seriously having baking withdrawals & I hate it! Alas, the closest Target’s an hour away (north or south) as is Bed, Bath & Beyond, but I already know my crappy Wal-Mart has the mixer I want. I’m trying to resist the urge to go get it tonight, and I’m trying to wait until Friday, since I only have to work a half-day. I can’t imagine not being able to bake for an upcoming holiday. Easter cupcakes are a necessity!!! :)

  2. come to my house and make those chimis for me! i’ll run to the bed bath and beyond acros the street and get you a new mixer :) plus, its 60 here today!

    • My husband told me just last night that I can make them again ASAP. He said too that some of the guys he works with were a little jealous b/c they smelled so good when he reheated them. I’m trying to decide if it’d be worth it to make smaller portions, so I could fit more in my baking dish, and eat more without feeling too guilty!
