Chocolate Salty…*ahem* Tartlets

I’ve kind of been a pile today, but after all the work I did yesterday, I think I earned it. I spent most of my day doing exactly what I said I was going to do on my vacation–Surf the web, and listen to music. I chatted with my sister Kendra for long enough that the battery in my phone beeped letting me know it was about to die. While I was chatting with her, I was working on something I’ve been meaning to make for awhile:


Pastry dough for Salted Chocolate Tartlets. I’d forgotten about the recipe for a couple months, and came across it a few weeks ago when I was looking for something else. I also mentioned it at a committee meeting last month, and a few people expressed some interest in them, if I were to make them. I figured now would be the perfect time to test them out.

I will say that I would love a food processor just for pastry dough making. I have a pastry cutter and I’m capable of making dough the old-school way, but as I was telling my sister (in between her laughing at me for whining), the convenience would be SO nice (for once).But I got the dough made, and the tart shells cut out and baked, although they didn’t quite turn out as deep as I was hoping:



Even still, after all the trouble I went to in making the dough, I wasn’t about to toss them or anything like that! While they cooled, I went back to surfing the net and fixing myself some lunch–I was craving chips yesterday, so when I popped back out to the store this morning to get some cream, I also picked up some kettle chips. They were delicious.

Once the tart shells cooled, I got started on the filling:


Ganache. I’m thinking that the next time I make these, I’m going to use regular salt instead of kosher salt. It didn’t quite dissolve as much as I was expecting. No matter.


I’m also not 100% sure I got the cream quite heated up enough, because the chocolate didn’t get as smooth as I was expecting. Even still the end result was delicious:



Between the salt & the richness of the ganache, those two tartlets gave me a bellyache! I should’ve had a large glass of milk to drink along with it.

After I picked up Jay & the bambino, we went on a walk–it’s nice, but windy as all get-out today, and at one point, we were struggling to walk into the wind!

Still, it was nice getting out of the house and into the fresh air for a bit, even if now I can hear the house rattling around. I think we’re supposed to get some thunderstorms overnight tonight, and it’s going to be back into the 50s tomorrow. Ah, well. At least we’re not under a blizzard watch!

And now that I’ve had my dinner, I might go have another tartlet–after I go put on my pajamas & settle in for some “Dateline.” I also have some laundry I need to go and put in the dryer!
