I decided early this morning that I wanted to make something for dessert. I didn’t want to bake cookies again, and I figured cake was too heavy. Instead I chose something a little lighter.
Pie. What is sad about this picture, is that that is the best I have ever done when it comes to fluting the edges of a pie crust. This also marks the first time I’ve baked a pie shell, rather than filling it right away & baking it.
The one side looks a little smushed because when I went to line it with foil, I had issues in getting it to fit over the crust without really messing it up. After that, I got to work on the filling.
Vanilla cream. Vanilla pudding, actually. I’d asked Jay & the bambino which they preferred–Vanilla or chocolate. Jay had no preference, and the bambino immediately started chanting “Vanilla! Vanilla! Vanilla!” And since I just wanted something cool & creamy, I was fine with it (although I would’ve just made chocolate, had I not requested input).
It was far simpler to make than I was anticipating. Milk, sugar, cornstarch, egg yolks, and some butter & vanilla. While it cooled, I got to work on dinner.
We FINALLY got to fire up the grill! Burgers…
And after waiting about another hour and a half, I put the finishing touches on the pie.
Lots of whipped cream. The original recipe called for meringue, but I’m not a big fan of it, so I substituted the whipped cream. And I’m glad I did.
Supposedly Inga & her boys are in town this weekend, so tomorrow at some point, we’ll be headed to Jay’s folks’ place for some meal. I should probably work on the laundry, just to get it out of the way, and so we have NOTHING hanging over our heads on Monday!
Nothing like dogs and burg over charcoal and a homemade pie. Reminds me of summers in Ohio!! XO
Now that you say that, it kind of makes me miss grilling at my sister’s & brother-in-law’s. I need to get back to OH sometime soon!
