“I’d rather be a square peg in a round hole…”

It’s been one of those days. I used to like listening to that song whenever I was done with a particularly bad shift at Mickey Dee’s way back when. I am slightly irked that the video looks & sounds like whoever uploaded it did so by videotaping his TV, but I could be wrong. Either way, it fits my mood. Sort of feeling beaten down, neglected, etc. But like the song says, I won’t let the bastards grind me down! Plus, it helps that it’s ska, and I’m never in a bad mood whenever I listen to ska.

My hacking cough last night had me waking up just about every hour & a half to two hours. I went to bed at 10:30, was up at midnight, then again around 3, and then the alarm went off at 5. I stayed busy though–Our statements showed up today, so I had those to sort. And for whatever reason, the phone rang off the hook today. No matter. I hopefully will get some decent sleep tonight. Jay & I both desperately need it. He ended up sleeping on the couch because of my hacking up a lung.

In spite of being so sleep-deprived, I did end up fixing dinner tonight. A simple steak with roasted potatoes.

I sliced up the steak like I did when I made the croissant sandwiches. The bambino & I split the larger of the steaks, and I divided up the potatoes among the three of us.

The potatoes were easy. I cut most of them in half, tossed them in olive oil, salt & pepper, and roasted them in a 400°F oven for about 40 minutes, tossing them after about 20 minutes. Both were excellent. I originally intended to save half of each for lunch tomorrow, but then I remembered we have a lunch & learn session, so I don’t need to worry about lunch! Which is good, since I ate all the steak & all the potatoes.

Then, I had some dessert.

Oh, Blue Bunny. You kill me with your deliciousness. And while the Red Velvet Cake is good, and I easily could’ve finished off the rest of it, Jay asked for some, and I was in the mood for something chocolatey and peanut buttery.

And much as I love chocolate, when it comes to something like this, I seek out the peanut butter chunks before anything else.

In other lame and random news, I have my menu set for the GOOP party Saturday night (that’s what we’ve been calling it, because sometimes we’re funny). I am excited. I am also excited to give the $3 vino a try. Again, even if it’s crap, I’m only out $6. I think Melissa will be coming over early with some better wine and to be my sous chef. Or to just chit-chat with me while I chop stuff. I was supposed to start with the house-cleaning this evening, but I’m too damn exhausted and the mess ain’t going anywhere. It’ll keep until tomorrow. Plus, my boss swung by the office before he headed off to a conference out of town, and is allowing me to leave a little early Friday afternoon, so whatever I don’t get done tomorrow night, I’ll take care of then!

  1. Random but two of my dream jobs have been 1) mail carrier and 2) own a McDonalds. I don’t know why but those both intrigue me so much.

    I make potatoes like that fairly often too. I will cut them a little smaller or even in fry shape so they get a little crispier. But I toss them in a little olive oil, salt, pepper, garlic, buffalo sauce & parmesean cheese. It gives them just a little kick and they are delicious!

    • I think knew about McDonald’s, but I did not know that about being a mail carrier. I should have you talk to my cousin Julie–She’s been a mail carrier for about 15 years or so.

      I would’ve liked mine a little crisper too–But I was starving when I started cooking, so I didn’t want to wait much longer! I’ve made fries like that before, minus the buffalo sauce. I should try that sometime–Jay & I love that stuff!

    • Hi DMC! I’m going to keep it pretty simple…a salad with her crostini & roasted tomatoes, chicken w/ 2 different toppings & some pasta on the side, and one of her berry desserts. If they turn out (or I really like them), I’ll post recipes at some point! :)
