“Nothin’ to do, nowhere to go…”

I’m salivating at the prospect of having a few days off. The only thing I’ve scheduled so far is an appointment in Sioux Falls to get some work done on Junior Thursday morning. This time, while I’m going to take some stuff with me (I have a pair of pants to return, as well as glass milk bottles), I’m just going to assume that I’m spending the entire day at the dealership. I usually go there thinking that I’m going to be done in a couple of hours, and I don’t end up getting out of there until it’s time to head back to Brookings. So, I figure that this time, if I assume I’ll be there all day, I’ll get done in a couple hours, and I can get some shopping done!

Today was not bad for a Monday, but some reason, I found myself craving comfort food. Specifically, macaroni and cheese. We ran some errands after work–The stomach flu is going around the daycare, and because a coworker of mine whose son is in the same group as the bambino left early to pick his boy up, I got paranoid about us coming down with the bug, so I made us pick up crackers, applesauce and Gatorade–Just in case. When we got home, I got to work on this:


While I cooked the pasta, I made the cheese sauce (melt a tablespoon of butter, stir in a tablespoon of flour, cook until it’s nice and browned, then whisk in a cup of milk. Cook that till it’s thick and bubbly, then stir in a cup and a half of cheddar until it melts–Salt and pepper to taste.). At this point I could’ve popped it in the oven, but I felt the need for breadcrumbs.

I have no idea what I’m going to do with my afternoon tomorrow. I was thinking about scheduling a pedicure, but I don’t know that I’ll have the time. I might make that my Friday treat. Or I might just spent the day in the kitchen. That’s the beauty of vacation…My time is my own!

  1. Enjoy your vacay! Joe had a couple of surprise days off and I spent my time napping. I needed it and actually felt good going into this week. Do something for yourself.

  2. I had some time off – 9 days! It was too much believe it or not, because I didn’t have any plans! Next time I will plan something. But a few days here and there is devine! Enjoy!
