Sunny-Side-Up

Shortly after we rolled out of bed, we popped out to the store. Jay and I talked last night about getting some stuff for breakfast (apparently my thoughts of some yogurt and homemade granola wasn’t enough), so we quick threw on some clothes and popped out to Hy-Vee. We got some waffles:


Vans Waffles. It’s been quite awhile since I’ve had them, but they are very tasty. Of course, I didn’t top mine with fruit–I used butter and maple syrup, but still. That’s a mite healthier than HFCS “syrups” and franken-margarine. I’d been in contact with some folks from Vans regarding doing a coupon giveaway, but I haven’t heard back from anyone in a few months, so I don’t think it’s going to happen. No big deal, I guess.

We also got some sausage:


Jones. The bambino would eat an entire package of these if I let him. We also picked up a ham steak for Jay and some juice. We’ve been watching a lot of Jeeves and Wooster lately, and I think Jay’s getting sucked into the food that Bertie Wooster’s always eating! I tried my hand at making a sunny-side up egg for Jay for the first time ever:


I wasn’t sure how it would taste. It looked decent-enough.


Jay inhaled it! Along with his ham steak, and his waffle. He actually asked for a second waffle, they’re that good! The bambino actually ate most of his waffle too (he usually snarfs his sausage and that’s about it).

We went over to have Sunday dinner with Jay’s mom and dad…And it’s my father-in-law’s birthday. My sister-in-law baked a cake, although my father-in-law didn’t have any (I didn’t either, just because the bambino and I planned to make cupcakes this afternoon). Which we did.


I used a different chocolate buttercream than usual–This one was off the Wilton website. It was a pain in the arse to make with a hand mixer, but it turned out well enough.


And the bambino had fun helping me decorate them.

For some reason, I seem to only be able to cook one decent meal a day. And take on one baking project. I copped out on dinner.


We had pot roast at Jay’s parents’ this afternoon, and I’d been planning on making beef and tomato stroganoff tonight. I didn’t really want to have beef two meals in a row, and I was tired after baking. And by the time I got the cupcakes done, it was late enough that if I had started dinner, we wouldn’t have eaten until 7 or later.


Pizza and chicken strips it was. And now, I think I’ll be off to bed. The bambino and I are headed to Sioux Falls tomorrow morning to get the car fixed. Again. I hope it doesn’t take too long.

    • We were done in a little more than an hour, which is good when you’re tending to a squirrely 3-year-old! Sorry about your car. Hopefully it’s not too expensive for you…!
