Mid-Week Exhaustion

This seems to be shaping up into the Winter-that-Wasn’t. Don’t get me wrong–After the last 2 years, I’m not complaining about anything other than how dry it is, and how it’s made my sinuses go haywire. It’s dry enough that even with our humidifier running full-blast 24/7, it doesn’t really make a dent in the humidity levels in our house. Oh well. I’m happy to put up with the occasional morning nosebleed and sinus headache as long as I don’t have to trudge through 8 feet of snow to get to the car if I need more ibuprofen from the store!

The bambino’s birthday was yesterday. I still have a hard time believing the little bugger’s 4 now. The time really does fly. He got lots of presents, although with all the cool new toys he got, he was most interested in playing with the Batman & Bat-cycle that came on his birthday cake! His grandparents weren’t able to join us after all–Apparently they’ve come down with the 12-hour stomach flu that’s been going around, which I am living in fear of. Last year was the first in three years I managed to escape having some gods-awful stomach flu/norovirus, and I’d like to make it two years in a row!

I came home for lunch, since I had the car. The bambino had his annual checkup this afternoon, so I was going to leave work early. And I was too foggy this morning to pack a lunch…I slept horribly last night. I’ve been sleeping horribly all week, now that I think about it. I was thinking of having the steak au poivre leftovers, but I found leftover Cincinnati chili from Christmas Eve, and because there was still shredded cheddar in the fridge, I ate that.


It was still really good, in spite of being over a week old. Seven days is usually my cut off for keeping leftovers, but I have a very difficult time tossing out anything that reminds me of home.


I just hope I don’t regret it later on!

I’d planned on making another Pioneer Woman recipe for dinner this evening–Marlboro Man’s Favorite Sandwich. I even tempted Fate by buying more sub buns from Hy-Vee, even though the last time I bought them, they went bad before I had a chance to use them! I kept looking over them, inspecting every inch, because if I found the slightest bit of mold, I was taking them back to the store (I slept like crap last night, so I am in no mood for nonsense today), and demanding fresh ones. Today’s the “best if used by” date anyway, which to me, says that if I’m going to use them tonight, they should still be good, right? However, my cube steaks were still pretty well frozen (something I hate about my fridge–It takes DAYS to defrost something), and while I was going to make some Tubetti cacio e uova, I remembered that I’m down to one egg. And by the time I figured out that I should get moving on dinner, it was too late to make pasta with The Sauce. So, I threw some tater tots in the oven, and got some hot dogs going.


I always feel lame when I fix things like this, but y’know? I can’t really feed my kid birthday cake for dinner (I’d eat it myself, but he needs something a little more substantial), and while I might not have too much of an appetite, I know it’s been a long time since his lunch. But speaking of birthday cake, I think I’m going to go and grab myself a slice, with a ton of frosting. Preferably a corner piece, since those have the most frosting coverage. And since I’m out of printer ink at the moment, I’m going to go and hand-copy a couple recipes I’m wanting to make. This is why I feel like there are never enough hours in the day…I have a serious back-log of recipes I’ve been meaning to try out for ages, and I have no clue when I’m going to get around to them!

  1. Please don’t take this in a bad way but the foods you blog about remind me of when we go visit my in-laws in Nebraska. In fact, we’re headed there tomorrow for 4 days. Whenever we get back home I always fix myself a large bowl of fruit salad and a huge helping of veggies….I swear fruit is an unknown substance in their house!!

    • I readily admit I don’t eat nearly enough veggies. There are only a handful I actually like. Believe it or not, I do generally eat fruit with breakfast, and usually lunch, although today, obviously, I didn’t. I have more time to blog about dinner, which sometimes ends up being hot dogs! Whereabouts in Nebraska are your in-laws? Just curious since I’m not that far from Omaha & Lincoln.

        • Ah. A bit farther away than Omaha or Lincoln. At least for up here, the weather’s supposed to be clear and fairly warm (for this area) through next week. I’d be willing to bet Nebraska’s going to be about the same!

  2. Sometimes you just need to make dinner of hot dogs and tots….I love it when we do every once in a while!

    If you find those extra hours in the week, please let me know how you did…I could definitely use some of them! :)

    • I figure it’s better than calling out for pizza (which I was really tempted to do!). At least we ate at home.

      I’m still looking for extra hours–I ended up going to bed before 10 last night, which hasn’t happened since before Christmas! I might do that again tonight. The extra sleep was great!

  3. Man alive – that cincy chili looks delicious!!! I haven’t had any in a while. I’ll have to see about getting some – one of our grocery stores here carries Skyline in the freezer section. That’s definitely going to be on the menu in the next couple of days. We will probably have hot dogs then too. :)

    • My dad sends me Gold Star packets every once in awhile (cans of Skyline are too expensive to ship!), and I have a TON! I make it whenever I’m feeling homesick. And definitely, have a couple cheese coneys! :)
