The Cheese Stands Alone

Today started off on another slightly wrong note…I had a bout with some insomnia Sunday night, due to some irritation Sunday afternoon. I won’t go into it, but let’s just say I was fuming for most of the afternoon and into the evening. Because I couldn’t shut my brain off, I was up until after midnight. And then when I woke up, I had a sinus headache. I had another bout of insomnia last night. It should’ve been a perfectly relaxing evening. Jay had to cover another school board meeting, the bambino and I went out for dinner, went to get more milk, came home, he took a bath, and we sat and watched one of his dinosaur movies. But no, I was not meant to sleep again. I hate when this happens, I really do.

After I got ready for work, I got myself some breakfast. I thought I’d try something a bit different for breakfast this week:

Berries, granola and Greek yogurt. Real creative, I know. But, I’m trying to be more serious about dropping some weight, and I read online (I think it was Eating Well) that supposedly, this combo gives you the biggest bang for your buck. I was somewhat skeptical, as I usually need more protein than what’s in Greek yogurt to stave off hunger, but I thought I’d give it a go. I’ve already cut out my two snacks/day when at work. I really don’t need them. I work a desk job–I think I eat more out of boredom than anything else. I am down 0.8 lb. for the week, and while it’s not all that much, I’d rather lose that than gain it. The weight might not be just melting off, but I’d like to think it won’t take me over a year to lose 40 lbs. I could be wrong, though. I was wrong about the oatmeal combo–By break time at ten, I was  starving. I didn’t bring any snacks, so I had to wolf down a Fiber One bar, just to get something in my stomach. By lunch time, I was shaking so bad from a blood sugar drop, I almost thought I’d pass out. And lord knows, my peanut butter sandwich and 12 potato chips barely made a dent in my hunger! I ended up going to the vending machine for a bag of Cheez-Its, because my stomach was still grumbling. In retrospect, maybe I should’ve had some fruit, but when you’re that hungry, you don’t always make rational decisions.

This morning, I decided on something else. I have ciabatta I need to use, and some eggs, and some cheese. Enter the egg and cheese sandwich.

And half of a grapefruit.

I love grapefruit. I wish they tasted good year-round, instead of only in winter.

We got a pleasant surprise at work yesterday morning…We received our bonus checks. Granted, mine’s already been spent, but it’s still nice pretending to have extra money in the bank. And while I found another new purse I’m absolutely in love with, I’m being responsible, and paying for the camera. After taxes and such, there was basically enough to cover that, but I did also have enough that I got myself a subscription to Saveur magazine. $27 for three years isn’t a bad deal…And I have the chance to win a stand mixer (even though I don’t need one and probably wouldn’t win anyway)! Still, another magazine for cooking and recipe ideas can’t hurt, right?

We found out today that we’re getting a new cheese plantA Laughing Cow Cheese plant!

They’re hoping to break ground on the plant sometime this summer. It’ll be nice to have the jobs in town, plus who doesn’t like cheese? Truth be told, though, I’ve never had Laughing Cow or BabyBel Cheese (apparently BabyBels are what will be made here in Brookings), but perhaps I’ll have to give them a try now!

I came home with more cupcakes than I expected yesterday…I took 18 of them into work, and left with 11, and that was only because at the last minute, a coworker came down to the break room and snagged one. I took it to mean that maybe I need to lay off the baked goods for awhile…Or I’ll just make them for Jay and the bambino. I do still need to make cookies for Jay’s coworker, who helped with our furnace…But as exhausted as I am, I don’t think I’ll get to them until tomorrow at the earliest!

  1. That granola breakfast looks scrumptious! But I can imagine how hungry you were. You seem to have a similar metabolism to me…I need som protein in the morning!

    • I’m sorry too! I wonder if it’s maybe partially due to the fact that I’ve been exceptionally busy at work this week, and I’m moving a LOT more than I normally do. Today, I ate lunch earlier than normal, and my egg sandwich wasn’t enough to hold me over (it was yesterday, though)! Weird…!

    • Thanks, Dave. I will definitely check out your site. I’m actually in Brookings, which is a few hours away. I haven’t visited too much of SoDak yet, and I’ve been here almost 8 years!

    • I think if I’m going to have that sort of breakfast, I’m going to have to have to add protein to it, or plan a protein-heavy snack to eat while I’m at work.
