Sunshine, Bagels and Chicken Sandwiches

I don’t know what my issue was yesterday, but after I published my post, I sunk into a whiny, pouty sulk that lasted for most of the day. I think a lot of it was just being super-tired, from the stress of the last two weeks and not sleeping well Friday night. I even entertained notions of just shutting down the blog, although that lasted about 30 seconds. We ended up going out for dinner at George’s, which was a nice treat, although I griped the whole way through the meal.

I was tired enough that at 9:30, I opted to go to bed (on a Saturday evening…I felt like such an old lady). I remember waking up when Jay came to bed about an hour later, but fell back asleep quickly and didn’t wake up until about 6:15 this morning. I laid in bed until the bambino yelled that he needed to go to the bathroom, so the two of us came downstairs. While he watched some cartoons, I got started on one of my projects for today–Eden’s Flax Bagels.

I was pleased that they looked like bagels when they came out of the oven.

A dozen lovely bagels. Naturally, I had to try one to see how they tasted. With some peanut butter, I thought they were really good.

I think they’ll make a nice and quick breakfast. They do taste “healthy,” as I told Jay, but that’s not a bad thing. I’m glad I made them–Bagels have always been one of those things that have somewhat intimidated me in the past. For some reason, I think the soda bath is what does me in, because it’s the same reason I held off on making pretzels for a long time.

After we got back from lunch with Jay’s parents, I debated on making the cupcakes tonight, or waiting until tomorrow. I decided I should go ahead and make them this afternoon, just to get them out of the way. And it was an excuse to get out more fun cupcake wrappers.

While I was browning the butter for the frosting, I had this incredible urge to crack a couple of eggs into the saucepan. I don’t even like fried eggs, but it just seemed like they’d pair so very well with the foamy butter. The cupcake recipe made enough that I have plenty to share with people at work:

We had lasagna at Jay’s folks’ this afternoon, so I figured I’d go a little lighter on dinner tonight. I usually swear up and down that I will not do two meals, and that the bambino can eat whatever we have. I make exceptions when we’re having something super-spicy, or I’ll offer to make something slightly different that what we’re having. Tonight was one of those nights. The bambino got chicken nuggets:

I’ve been wanting to make some paninis for awhile, and when I thought I’d be making the vinegared pork roast last week, I thought the leftovers would make good sandwiches. But in the end, I decided to make chicken sandwiches, with some of the Laughing Cow cheese I bought last week, as well as some arugula I also bought last week.

They were good. Jay liked the combo of the chicken with the Laughing Cow cheese (Sun-dried tomato and basil mozzarella). And it was filling enough (along with the Parmesan-crusted potato wedges I made but didn’t photograph) that I opted to save half of it for tomorrow’s lunch. I now have a serious mess to clean up in the kitchen. If I’m going to get to bed at a decent hour, I suppose I better get to work! Good night everyone!
