“Life goes by so fast…”

I knew that because I had today off, I’d come down with the cold that’s going around work. Sure enough Wednesday night, I felt awful. I originally chalked it up to my breaking down in tears while at work, because a crying episode inevitably clogs up my sinuses. However, I woke up yesterday still feeling run-down, and like I was coming down with something. And today, I’m congested and still not feeling like myself. It’s not enough to slow me down, just enough to irritate me.

But because I had all the time in the world today (well, until about 3:50, when I had to go and pick up Jay and the bambino), I went ahead and did the grocery shopping. We’re planning on going to Sioux Falls tomorrow, so I thought I’d get it out of the way today.

The meat. The chicken was for tonight’s dinner, which I’ll get to momentarily.

I was afraid that I might not get mascarpone, although after I grabbed the fontina, the guy stocking the cheese asked if I needed help finding anything. When I said I needed mascarpone, he opened a box and got me some. He also told me that this particular brand of mascarpone is made with cream, rather than just milk. I need to find a reason to go back and get more of it.

I seriously wanted to just eat that with a spoon right out of the tub. It was SO rich and creamy. MUCH better than cream cheese.

The cake flour, and chocolate chips were for the cake I made today–Smitten Kitchen’s/Dorie Greenspan’s Tiramisu Cake.

I read through a lot of the comments and paid attention to those complaining that the cake didn’t work for them–I think the only changes I personally would do the next time I make this (and there will be a next time) would be to make sure the mascarpone is at room temperature, and to chill my mixing bowl and whisk attachment longer, before whipping the cream.

While that was chilling and after I picked Jay and the bambino, I got to work on dinner.

Lemon Peppered Chicken. It’s something I make on occasion, and I thought it sounded good for tonight. I didn’t add the cayenne until after I set aside the bambino’s portion. And after dinner? The cake.

Jay declared it the best cake I’ve ever made. It is delicious. Not quite the same as tiramisu, but still very very good. I think it’ll be even better tomorrow.

Thanks to some server issues with my hosting company, this entry has taken me about 2 1/2 hours longer than necessary to complete. And since we will be heading to Sioux Falls tomorrow, I’m going to bed. Good night everyone!
