A Doozy of a Week

I know I’m in the minority on this, but I’d almost rather not have bank/government holidays off from work. It makes the rest of the week seem to go on forever. Plus, that thing I mentioned I was so hopeful about? I don’t want to jinx myself or anything, but I hope to have an answer regarding it the next couple weeks or so. And then I can stop being so damn mysterious!

I had a work function Thursday night, and while I got convenience food for Jay and the bambino, I neglected to get anything for myself. So I made some toast, snacked on about 6 chocolate chip cookies, and then ate a few appetizers at the convention/event center we were at. We were supposed to get socked with 4-8 inches of snow, but the storm apparently dipped further south than the weatherpeople were expecting it to, so we got about an inch. It was weird, though, because the roads ended up having a glaze of ice on them by the time the shindig was over, which made for a slippery ride home.

But thanks to the new snow cover, my SAD kicked in, plus I was on-edge about my “mystery” on Friday, so by the time we got home Friday night, I was just done. Stick-a-fork-in-me-done. In fact, last night’s dinner? Ham sandwiches for Jay and the bambino, and a bowl of popcorn for me.

But today became the day to get back on track. I don’t recall the last time I cooked…Honestly, I think it was Monday, when I made the braciole. I was going to make Lemon Brown Sugar Chicken last night, until I remembered I was out of brown sugar. Then I got lazy, it was late, and finally I remembered the ham in the fridge, so there you go. I actually spent a good portion of the morning working on a grocery list and a menu for next week:


I even found a couple recipes from the cookbook the bambino gave me for my birthday a couple years ago:


I know I have a bad habit of spending hours planning a menu and making a shopping list, only to fizzle out by mid-week. However, Jay and I discussed the fact that we’ve eaten out WAY too much lately, and not only do we need to get back on track with eating better and at home, we need to start exercising as well. Even the bambino has called us out on that. You know you’re a lazy slob if your four-year-old is telling you that you need to get off your butt and move it!

I did get a couple things that weren’t on my list–Namely the strawberries, grapefruit, and the chicken stock. I still managed to keep things at $43, though. Not bad, since that total also includes TP, bleach and some deodorant (not pictured, but I think you can all figure out what those items look like). I figure the reason I could remain on track was due to the fact that I hardly bought any meat. Just ham:


It’s going to be split between two recipes next week.

Much later than I planned, I got to work on the Lemon Brown Sugar Chicken, now that I have brown sugar again. We spent the afternoon watching Curse of the Golden Flower, and went to run errands afterward. Once we got home, I started some brown rice–A double batch, since I’m going to use rice in another recipe later in the week. It pairs well with the chicken.


I tossed some sesame seeds on top this time–Just for the heck of it. That, and the dish reminds me of Hy-Vee Chinese’s sesame chicken. Slightly healthier, since it’s just dredged in flour and not battered.

I have a lot planned for tomorrow–I want to make more bagels, some brownies, and baked cod with some salt and vinegar potatoes. Plus, I have to do laundry, since I slacked off today! I think even though it’s a Saturday evening, I’m going to be heading to bed before 10 PM.

  1. I right there with you. I’ve been in a cooking rut lately, needing to try new recipes. So in light of that, I’m going to try your lemon brown sugar chicken this week. Hope that reinvigorates my cooking!

    • Let me know what you think of it. I absolutely LOVE it. I will come thisclose to licking the baking dish clean, I think the sauce is that awesome. And every time I make it, I never think to double or triple the recipe for leftovers (something I inevitably bemoan as I’m stuffing it in my craw!). :)

      • Made it last night and served it to some friends at work who I’m in a “lunch club” (for lack of a better term) with. We take turns bringing in lunch for 3 of us. We rotate every Tuesday and Friday Anyway, I served your chicken with a simple baby greens salad with roasted potatoes and a lemon vinaigrette. It. Was. Awesome. We all did drink the sauce/dressing left on the plate. It was a wonderful, healthy lunch! Last night I had it with the roasted potatoes and some peas. So good! I’m glad I tried it!

        • Haha! I’m glad you liked it! I have a couple other things I’m going to try next week, but I’m already thinking I should make the chicken again!
