Another thing I’ve had in my head I needed to make this week was some Buffalo Chicken–But in the crock pot. I love boneless wings, I love chicken that’s been breaded or battered, fried, and then tossed in spicy orange sauce. But when it comes to making it myself, especially on a weeknight, I either call George’s and order a pizza, or I snarf a chicken strip appetizer with the hot stuff on the side.
Enter Crock Pot Buffalo Chicken.
Part of its awesomeness (aside from the buffalo sauce) is that it’s another set-it-and-forget-it meal. Plus, it’s super-simple to put together. You only need chicken and buffalo sauce. I did also add a packet of ranch dip seasoning (an old freebie from my Foodbuzz days), but I suppose it’s optional. All I did was toss the chicken in the crock pot (I used 2 packages of chicken breasts, for a total of 6, just because Jay and I both will likely go back and just slurp this stuff up with a spoon!), sprinkle the ranch seasoning over top, pour in most of a bottle of Frank’s Wing Sauce, flip the crock pot to high, and away I went! After he and the bambino picked me up from work, Jay practically begged me to get dinner started.
Sheesh! Still, it seems to have been enough. I’m not stuffed. I don’t really want to eat anymore…At least not right now. I think I’m going to bed early tonight…I started Jillian Michaels’ 30-Day Shred this morning, and it kicked my butt. Plus, I didn’t sleep so well last night, so I’m a little tired. I’m going to try and drag myself out of bed tomorrow to do the workout again…Although I might just hop on the elliptical!
