Chicken Taquitos and a Blizzard

It’s Mother’s Day, and dutiful daughter that I am, I called my mom about 5 minutes ago. I haven’t called either of my sisters, although I believe my sister Shelley tried calling me just as I was setting dinner on the table–Sorry Shell!! And before anyone asks, no, I haven’t been taken out or gotten my Mother’s Day gifts yet…Jay’s waiting for payday, which doesn’t come until Tuesday. And that’s fine with me. I’m not the type who needs breakfast in bed, although I wouldn’t mind a brunch out (although, even that would be iffy, just because I hate crowds). In fact, I’d rather get a kitchen gadget or something Star Trek or superhero-related, because I’m that much of a dork.

I didn’t do a usual Sunday breakfast this morning…I was feeling uber-lazy, and really other than laundry, I didn’t do much else except waste a bunch of time on Pinterest, and looking up stuff on some of the eye candy from The Avengers (Aside from Robert Downey Jr. & Chris Hemsworth, Jeremy Renner & Tom Hiddleston are also easy on the eyes, and I am looking forward to Thor 2 next year). Around 4, I got off my duff and started on dinner:

Creamy Baked Chicken Taquitos. Yesterday, during my hours on Pinterest, I came across a recipe for BBQ Pork Baked Taquitos from the same blogger, which she had based on this recipe. I chose to make the chicken ones instead.

As I don’t care for salsa, I topped mine with taco sauce, which I also used in place of the salsa verde called for in the original recipe. I also left out the cumin, as I’m out.

I think three was a bit too many, though. I made my lunch portions with the leftovers using only two taquitos. I also made some cilantro-lime brown rice on the side. Assuming I don’t get sick of them, I have enough to last me through Wednesday.

And in spite of being stuffed, I decided before I even started on dinner that afterward, I wanted ice cream, so we ventured off to Dairy Queen. I got a small Blizzard:

Reese’s Peanut Butter Cup. And as soon as I finished that, I had to go get my elastic waist pants. And I think I will go to bed early–Starting tomorrow, I have the best of intentions to do the 30-Day Shred every day (with a rest day on either Saturday or Sunday) until I complete it. I’ll only be on Day 3, so I’ve got a long way to go!

  1. You have some excellent style, girly! I love LOVE taquitos and have never made them homemade, which I bet would make them so much better…I’d become addicted pretty quick. And the peanut butter cup blizzard – totally what I would choose from the DQ drive through! ;)

    • Thanks! :) They’re about as difficult to assemble as enchiladas–My only complaint is that they don’t get quite as crispy as frying them does, but they’re still pretty tasty!
