Meal #1: Thai Steak Stir-Fry

This only partially counts as a “Grocery Bag” meal…The Monday meal was supposed to be some bass or some other broiled fish, but as I’m super-picky about the type of fish I’ll eat, I opted to skip that one. Instead, I decided to make the Thai Steak Stir-Fry that had me drooling after my week-long binge of crap food.

It’s super-easy, relatively quick (if you count having to freeze the steak for 15 minutes, then thinly slicing it), and for someone who doesn’t eat veggies on any real regular basis, good.

I did as the recipe suggests, and served it with rice. I’ve been using regular white rice recently, and decided this time, I’d use brown. I figured I needed all the help I could get in the healthy department, since I made some brownies for dessert:

Fudge Brownies with Peanut Butter Chips. I did use white whole-wheat flour in them, but I figure that’s been cancelled out by the addition of the peanut butter chips. No matter.


They are delicious, and if I can help it, I will avoid eating the entire pan, as I have another weigh-in in approximately 40-some-odd hours! But now, as my kitchen is a complete disaster (again), I need to go unload the dishwasher so I can reload it, and then maybe relax for a little while before bed!

    • I do kind of wish I’d added more steak to it–The recipe calls for 1/2-lb., and I wish I’d used the whole sirloin I had to buy. It was really good, and filling, and I was surprised that the garlic (which I thought was a lot) didn’t over-power the dish at all. I’ll have to post the recipe for the brownies later today–Between my husband and I, half of them are gone already! :D
