Meal #2: Grilled Steak & Vegetables

More proof the Universe hates me: Apparently the hard drive on my desktop is either dead or has gone berserk. This morning when I was looking up a few videos on YouTube, it suddenly froze in the middle of a song. I didn’t think anything of it–It was time for me to get ready for work anyway, so I manually shut down and went on my merry way. This evening, before starting dinner, I tried checking my email. I couldn’t load anything, and now my computer’s in pieces, because Jay was trying to do diagnostic work on it. I suppose it’s not a huge problem, just because I have the laptop and all…But I have a lot more pictures on my desktop, as well as all my music. That, I would like to recover, if possible. So, I’m annoyed, and feeling like I get knocked down, but I get up again (sorry–I couldn’t resist).

While Jay was dissembling my computer, I got to work on dinner. Since we went out last night, and I microwaved burgers the night before, I’m a little behind on my experimental dinners. Tonight, though, I got back on schedule with Grilled Steak and Vegetables:


I not only used the flank steak I bought over the weekend, but the other half of the sirloin from the Thai Steak Stir-Fry. I gave that half to Jay, basically so he’d leave the flank steak alone! I used peppers and zucchini as called for in the recipe (but left out the onion):


I didn’t eat the peppers, but Jay seemed to like them enough that he went back for seconds. Half the veggies are hanging out in the fridge for use in a couple more days.I also made some rice to go with, although this time I went with white. I dunno what the deal is, but lately, I cannot get my brown rice to cook up in less than an hour, even though I haven’t changed anything about how I cook it, or even what brand I’ve been buying! Knock on wood, the white rice seems to cook exactly according to package directions, which helps.


There were steak and rice leftovers, and if I really wanted veggies to go with lunch, I could pull some out of the reserves. Still, I think I’ll leave those, and take some extra fruit instead. Overall, dinner was good, and I’m full without being stuffed. Plus, I’m only slightly over my daily WW points, but that’s more because I decided a bag of potato chips was necessary at afternoon break. I think for the rest of the evening, I’m going to go and wallow for a bit.

  1. So sorry to hear about your computer…I hate it when things like that happen! Hopefully you can get it back to working order!

    This meal looks like a perfect summertime meal! I love grilled steak and veggies!

    • I hope so too! My husband’s pretty awesome when it comes to computer stuff, and he’s pretty confident he can salvage everything and get it working again!

      I’m hoping the next time I make the grilled steak and veggies, I can do it outside! We’ve had a string of days where we’ve had afternoon thunderstorms–not ideal grilling weather!
