Half-Way Mark

I’ve been slacking quite a bit with my Everyday Foods meals…I had the best of intentions, but like always, things went awry. It’s not that I haven’t been cooking…Sunday evening, I made cookies:


Chocolate Hazelnut Cutout Cookies. They are delicious, but extremely delicate. I lost about 6 of the 20 sandwiches I would’ve had trying to spread the filling in them. Which was fine…I still had enough for home, as well as a few coworkers:


Yeah, I have too much time on my hands some days.

Last night, since I desperately wanted pizza, I made some. I made the dough (and since you’re supposed to halve it before baking the crusts, I have another pizza waiting to be made…As soon as I get to the store and get more cheese!) and the pizza sauce from scratch:


I like homemade pizza sauce a lot better than the store-bought stuff…And this is done in less than 15 minutes. I thought I had the recipe already typed up–I’ll have to do that later. I also got out some chicken sausage, as I knew Jay would be more inclined to eat pizza with meat on it:


I had really wanted to broil these with some tomato sauce and the mozzarella over top of them, but we don’t have buns at the moment. So they were sliced and put on the pizza, which, naturally, I forgot to photograph.

Tonight, I made a pork dish:


Glazed Pork Chops, from the Taste of Home Diet Comfort Food Cookbook my mom sent me a couple months ago. I was skeptical I’d like this, just because it involves orange marmalade, and I do NOT like chunks of anything in my jelly–Not even fruit chunks, let alone peels. But it was good…Even though I didn’t eat a whole lot:


I weighed in today, and gained back less than half a pound, which was enough to annoy the crap out of me. And right now, I’m fighting cravings for dessert. Which we don’t even have, so that’s probably a good thing. I’d kill for some ice cream right this moment!
