“It’s a little bit funny…”

I know I’m weird when it comes to food. I don’t think there’s too many people out there who DON’T have a relationship with food that’s not skewed in some way or another. I’m constantly thinking about it, constantly looking for recipes, making lists of ingredients or things I want to make. It’s all running through my head at any given waking moment. And I find that the busier I am outside of the kitchen, the more reasons I find to try and make time to get into the kitchen. This afternoon is no exception.

I took the afternoon off since I have to work on Saturday, and figured I’d get the grocery shopping done. I also decided that just for the heck of it, I’d make cinnamon rolls to bake tomorrow morning and take into work. I also thought I’d work on some recipe development for another project. That, however did not happen, as I decided to be a lazy pile while all alone, and got sucked into finding something for dinner. Chicken happened to be on sale, so I picked up a couple packages, planning on using one of them this evening (the other’s for the aforementioned recipe development). Since it’s kind of warm out again, I wanted something along the lines of sandwiches or something that could be done on the stovetop without much work on my part. I decided on Chicken Parmesan Paninis.

I recall really liking the grilled bread when I made Buffalo Chicken Paninis awhile back, so I wanted to do that again. I decided to make pizza sauce, since I don’t have any marinara or anything on-hand at the moment. And I figured I’d just use up whatever cheese we happened to have (mozzarella AND provolone!).


I started by pounding out the chicken, then frying it in a little bit of olive oil. While it was cooking, I made the pizza sauce. While the chicken was resting, I started heating up the panini maker. I unrolled the bread, then cut it into 8 pieces. I popped them on the panini press for about a minute–Just to get them firmed up a bit. Then I dipped the chicken in the pizza sauce, slapped a piece of cheese on it, then put the whole thing back onto the panini press for about 3-4 minutes. Just to get the bread nice and browned and the cheese melted.

They were good–Even if my bread slices didn’t quite match up. But that’s okay. I picked up some chips for the side:


I didn’t notice till I got home that they were low-fat–I got them because of the flavor. I figured that would go well with the sandwiches. They’re very mild–More parmesan than sun-dried tomato, but that’s okay. Unfortunately for me, though, low-fat or not, they’re still chips, which are one of my weaknesses. So I’m making a conscious effort (for right now anyway!) NOT to go and polish off the rest of the bag tonight! In fact, I think I’ll go start the dough for the cinnamon rolls, so they’re ready to pop into the oven while I shower tomorrow morning. Have a good evening!

    • We got our panini press as a wedding gift, and I’m afraid it’s on its last leg. :( I’m still using it, though. I should look into getting a new one sometime soon.
