It was a Buffalo Chicken Pizza Kind of Evening

I was planning on doing this post last night, but between getting sucked into “The Voice,” then an episode of “Dexter,” it just didn’t happen. It was a Monday, and they’re jerks like that sometimes.

But because it was a Monday, by the end of the day I was feeling like I just wanted Buffalo Wild Wings or George’s. Instead, we popped out to the store, where I picked up a pizza crust, and we came back home so I could get started on making a homemade version.

Buffalo Chicken Pizza, a la George’s Pizza. I figure that it’s moderately healthier, although Jay and I like an ungodly amount of cheese on our pizzas, so maybe not. I just cut up some chicken tenders, pan-fried them in a little bit of olive oil and then scattered them over the top of some Frank’s Buffalo Wing Sauce (I LOVE that stuff).

And yes, I even made fries on the side–MUCH cheaper than what we’d get at George’s and just as good.

Easy Buffalo Chicken Pizza

Easy Buffalo Chicken Pizza

My version of my favorite take-out meal from my favorite restaurant

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 1 recipe pizza dough, thawed bread dough or ready-made pizza crust
  • 12 oz. chicken tenders or boneless, skinless breasts, cut into bite-sized pieces
  • salt & pepper
  • olive oil
  • 1/2 C Frank's Buffalo Wing Sauce
  • 3 Tbsp. butter
  • 1-1 1/2 C shredded pizza cheese (mozzarella, provolone, Italian-blend)
  • celery & carrot sticks (optional)

Instructions

Preheat oven per directions on pizza crust or dough. If using dough, follow directions for pre-baking if necessary.

Season the chicken with salt & pepper. Pan-fry in about a tsp. of olive oil over medium heat until cooked through and beginning to brown, 5-6 minutes. Set aside.

In a small bowl, microwave the butter until almost melted. Whisk in the Frank's Buffalo Sauce and microwave 30 seconds more. Whisk again to fully combine.

Spread the buffalo sauce on the pizza crust. Top with the chicken and cheese. Bake for 8-10 minutes, or until cheese is melted and golden. Serve with carrot and celery sticks if desired.

  1. I LOVE anything spicy! Buffalo chicken is definitely a childhood favorite. I was a strange child…Buffalo mac & cheese, too :P
