Buffalo Chicken Mac & Cheese

Nothing quite says “I love you,” or “Happy Valentine’s Day!” like Buffalo Chicken Mac & Cheese. While we decided that no, we’re not going to go anywhere for dinner this evening, Jay, the bambino and I still need to eat. I decided last night that since I was doing all that baking, we would either go out or order in. Ordering in won out, since the bambino didn’t want to go anywhere (he’s in this phase of deconstructing and reconstructing all his Lego sets, so he didn’t want to have to leave in the middle of that), and I had hoped for a buffalo chicken pizza. Alas, Jay wanted a calzone and actual wings, so I got a burger. But I’ve still been craving something with buffalo sauce on it, and figured that I’d give Buffalo Chicken Mac & Cheese a try. I love chicken, I love mac & cheese, and you could put buffalo sauce on an old leathery shoe and I’d still eat it!

It did mean yet another trek to the grocery store, since I needed cheese, chicken and pasta. I chose shells, just for the heck of it.

This is as delicious as Buffalo Chicken Dip…Which I am also addicted to. It’s no wonder I’m at a stupid weight-loss plateau–I keep eating stuff like this! Ah, well…Even though I totally could eat this every day, I don’t.

Poor Jay…I think he’s getting burned out on Buffalo everything these days!

Buffalo Chicken Mac & Cheese

Buffalo Chicken Mac & Cheese
Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes


  • 2 C uncooked shells or elbow pasta
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 C milk
  • 1 C shredded mozzarella/provolone cheese
  • 1 C shredded cheddar cheese
  • 1/2 C Buffalo sauce
  • 12 oz. cooked chicken (can be shredded, diced, etc.)
  • Cooking spray


Preheat oven to 350 degrees F. Set a large pot of water to boil for the pasta.

In a large saucepan, melt the butter over medium heat. Whisk in the flour, and cook for 3-4 minutes, until lightly browned. Slowly whisk in the milk. Cook and stir until the mixture is thickened.

Stir in both the cheeses, the buffalo sauce and the chicken. Cook for 1-2 minutes.

Meanwhile, cook the pasta for 7-8 minutes; cooked, but not fully (the pasta will continue to cook while in the oven). Drain, and add the pasta to the cheese sauce. Mix well, then pour into a 2-qt. baking dish coated with cooking spray.

Bake for 20-25 minutes, until browned and bubbling. Let stand for 5 minutes before serving.
