Easy Buffalo Chicken Sandwiches & The ABCs of Me

I had leftover chicken from the Creamed Chicken I made the other evening, and I wasn’t 100% sure what I was going to do with it. After picking up some sesame seed rolls at Buttercrust, I decided I’d just make chicken sandwiches. Jay hinted he’d like something with spice, so I tossed ours with buffalo sauce, topped with cheese and popped them under the broiler.

Of course, I left the bambino’s plain. I was shocked last week when he helped me make chicken enchiladas, tried the enchilada sauce, declared it good (and granted, I did only use mild sauce), and then proceeded to eat an entire enchilada without much prompting. I have a feeling it’ll be awhile before I can convince him to try buffalo sauce, though.

Easy Buffalo Chicken Sandwiches

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes

Ingredients

  • 12 oz. cooked chicken breast, thinly sliced
  • 2 Tbsp. unsalted butter, melted
  • 1/4 to 1/3 C buffalo wing sauce (I always use Frank's)
  • 4 large rolls (such as Kaiser rolls), split
  • 4 slices provolone cheese

Instructions

Preheat the broiler. Line a baking sheet with foil and set aside.

In a medium bowl, whisk together the buffalo sauce and the melted butter.

Add the chicken and toss together. Pop in the microwave for about a minute, just to take the chill off the meat (if you don't have/don't use a microwave, you can do this in a medium saucepan over medium-low heat--It'll just take longer).

Place about 1/2 C of the chicken on each of the bottoms of the rolls. Top with a slice of cheese and pop under the broiler for roughly 5 minutes, or until the cheese is melted and starting to brown.

Top with the other half of the roll and serve!


If you’re normal and not like me, you could easily add shredded carrots and/or diced celery to the chicken mixture. Or you could serve carrot and celery sticks on the side, rather than fries like I did!

Neither–I’m not a big fan of anything gummy, unless it’s Sour Patch Kids.

Cincinnati, Ohio.

Oh, Baileys Irish Cream at the end of a crappy day.

This is a tough one. The bambino’s birthday is in January, but I have issues with Seasonal Affective Disorder. I also hate extremes in temperature, so July’s not really my favorite either. Guess that means it’s a wash.

Just my bambino. The light and love of my life.

L: Life isn’t complete without?
Coffee.

M: Marriage date?
21 October. I wanted something closer to Halloween, but the hall where our wedding and reception was held was booked for that weekend.

Two sisters and two non-DNA-related brothers.

Apples.

They-Which-Shall-Not-Be-Named, claustrophobia, acrophobia, and whatever the fear of deep water is.

  1. I’m so glad you did the ABCs! It’s great to learn more about you! My mom is also from Cincinnati. And I love Hello Kitty too. Years ago my parents bought me a gold and diamond pendant necklace of Hello Kitty. I still wear it all the time.

    • Jay (my husband) makes fun of my liking of Hello Kitty. I have a Hello Kitty lunchbox I bring to work on occasion, and I always get comments on it. :)
