Well, the bambino had his first day in kindergarten today. It was bittersweet. He was already somewhat chipper and ready to participate when they lined all the kids up, although I think for a little while he was a little hesitant about it all. But he was smiling when we tearfully exited his classroom, so I knew he’d be fine. It helped that there was a meeting for the parents right after school started, so I could compose myself. Still, once I dropped Jay off at work (I took the day off), I came home and promptly got to work on a couple baking projects, the first being Nutella Sandwich Cookies.
I’ve made these before, but it’s been a long while. They’re always a hit when I make them, and this time around, a batch is for an old blog friend’s belated birthday. Eugene and I became friends back at Blog City (as did Sacha and I). Like Sacha, we’ve never met in person, but have kept in touch over the years. He jokingly suggested I send him some desserts, and while I haven’t yet figured out how to ship cupcakes in the mail, I CAN mail cookies! And Nutella is loved by virtually everyone (I know, there are people out there who don’t like chocolate and wouldn’t eat Nutella, but I imagine they’re few and far between), so it was the perfect excuse for making Nutella Sandwich Cookies again.
Preheat the oven to 375 degrees F. Line 2 or 3 baking sheets with parchment paper and set aside. In a small bowl, whisk together the flour, baking soda, and salt. and set aside. In the bowl of a stand mixer, cream together the Nutella, butter, and both sugars, about 3 minutes. Add the eggs and vanilla and blend until combined. On low speed, add in the dry ingredients. Do not overmix. Using a small (1 Tbsp) cookie scoop, place the dough on the prepared cookie sheets. Bake for 6-8 minutes. Remove from oven and cool on cookies sheet for about 5 minutes. Remove and cool completely on wire racks. Once cool spread a layer of Nutella between two cookies, and sandwich together.They are so so good. I made sure to double the batch so I’d have extras (which I may or may not be sharing with certain people when I go back to work tomorrow).

Needless to say, the few I had left after sending the bulk of them to my friend disappeared in a matter of minutes. :)

They are so very very good…I think I maybe had 2 sandwiches myself, set aside 3 for a coworker, and my husband polished off the rest! I’ll have to make more of them soon!
