Spaghetti Pie

Over the weekend, Jay requested Chicken Parmesan. It was hotter than Hades (still is), but I made it anyway. We had far too much pasta left, though, and to use some of it up, I made Spaghetti Pie.

Jay was skeptical when I told him what I was making. I got the “Are you sure this will be edible?” look from him. The bambino was also skeptical…I got “Mama, WHAT is spaghetti pie?” Crispy, crunchy pasta, mixed with eggs and whatever you want. I’d used diced tomatoes in the original pasta I made, so I tossed in some garlic powder, onion powder and some mozzarella.

Jay was surprised enough that it was decent and he ate two pieces. The bambino (with a little prodding) ate a full slice. I had two myself, along with a salad. It was good! It’s like a cross between a frittata and…Well, it’s like a crunchy frittata, I suppose.

  • 12-16 oz. cooked spaghetti
  • 4 large eggs
  • olive oil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • salt & pepper to taste
  • 2 oz. fresh mozzarella, torn into rough chunks
  • shredded Parmesan, optional


  1. Heat about 1/4 C olive oil in a 10-inch skillet over medium heat. In a large mixing bowl, beat the eggs with the garlic powder, onion powder and salt & pepper. Add in the spaghetti and the mozzarella, tossing the mixture to coat well.
  2. Place the pasta in the skillet, pressing down on the top with a spatula. Cook for 8-10 minutes or until golden brown, and the pasta holds together.
  3. Carefully flip the pasta over, using a large dinner plate to help, and cook the other side for 8-10 minutes, or until golden and the eggs have set. Remove to a cutting board, and allow to stand for 5 minutes before cutting.

I really liked it, even if my family claimed not to! The nice thing about a dish like this is that it’s a kitchen sink or clean-out-the-fridge kind of meal, so you can add whatever you happen to have on-hand. I’m tempted to boil a batch of noodles just to try another variety of it!
