I forgot to take something out of the freezer–I am horrible about remembering to do that. We stopped by the grocery store after Jay and the bambino picked me up from work, and for that reason alone, you’d think I would remember to take meat out to thaw. I HATE going to the grocery store right after work. It’s like going to the store around 10 on a Saturday…Everyone in town is there! Not to mention, I’m usually hungry and/or crabby and just want to go home and get into flannel pants.
But aside from having to pop out to the store, I did have a plan for dinner. I told Jay that if he could find me a decent-looking sweet pepper, we could pick up some stir-fry beef and I’d whip something up. So I did an Easy Pepper Steak.
Of course, I had to “force” the bambino to eat a tiny sliver of a pepper (the rule at dinner is he has to take at least one bite of a new or infrequent vegetable, before declaring it “yucky,” or ” ‘It’s really good!’ ‘Want more?’ ‘No thank you.’ “), but he at least ate some meat and some rice.
I’ll consider that a success. For ease in cooking, make sure the ingredients are all minced/sliced ahead of time.
Heat a Tbsp. of the peanut oil in a large skillet or wok over medium-high heat. Add the sliced peppers and garlic, and cook for about 2 minutes. Place the peppers and garlic on a plate and heat the other Tbsp. of peanut oil in the skillet.
Add the meat, and allow it to cook for a minute before moving it around to finish cooking. Add the peppers and garlic back to the skillet and warm through.
Serve over rice, if desired.
Now, if I can just remember to take something out to thaw before I go to bed…!
