Buffalo Chicken Meatloaf

It feels like it’s been ages since we’ve had any chicken with buffalo sauce. Which, in reality, means it’s probably only been a week or two. Still, I think it’s been a few weeks at least since we’ve eaten at Buffalo Wild Wings…Which is good. For awhile, we seemed to be going once a week, if not multiple times a week! It’s to the point now that the last time we were there and Jay got his usual order of wings (half Asian Zing and half Mango-HabaƱero), he had tears streaming down his face due to the heat! He’s since switched to one of the burgers, which isn’t nearly as spicy. But I wanted junk food, something cheesy and with buffalo sauce. We’ve been doing our best not to succumb to the temptation of ordering out, but I really REALLY wanted a buffalo chicken pizza. Or carry-out from Buffalo Wild Wings. Instead, I made a Buffalo Chicken Meatloaf:

I made a regular chicken meatloaf a few weeks ago, and the family inhaled it. The bambino wouldn’t eat this one, but that’s fine because Jay and I took care of it ourselves.

Buffalo Chicken MeatloafI opted to just have fries on the side, since that’s what I’d order if I had gotten a pizza. All in all, my junk food cravings were satisfied, and we saved ourselves $30+.

Buffalo Chicken Meatloaf

Buffalo Chicken Meatloaf
Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes


  • 1 lb. ground chicken
  • 1/2 C whole wheat breadcrumbs
  • 2/3 C shredded mozzarella, divided
  • 1/3 C buffalo wing sauce (I used Frank's)
  • 1 egg, lightly beaten
  • Cooking spray


Preheat the oven to 400 degrees F. Spray an 8x4-inch loaf pan with cooking spray and set aside.

In a medium mixing bowl, combine the chicken, breadcrumbs, 1/3 C of the mozzarella, buffalo sauce, and the egg. Using clean hands, mix until combined, being careful not to over-mix. Shape into a loaf, and place in the prepared pan.

Bake the meatloaf for 40 minutes. Top the meatloaf with the remaining 1/3 C mozzarella, and bake 5 minutes more, or until cheese is melted.

Remove from oven and let stand 5 minutes before removing from the pan and slicing.

I should mention that I made the servings 8-10, because normal people probably won’t snarf this the way Jay and I did, but that’s what elastic-waist pants are for. I think I did cut 8 thick slices, and I set aside two pieces for my lunch tomorrow. So we weren’t total gluttons.
