I’ve had the past few days off from work, because once I told Jay what we’d have to pay for the bambino to go to all-day care through school, he decided we needed to split the winter break between us. I took the bulk of the first part, and he’ll take basically the rest of this week after tomorrow. While I’ve been home, I’ve been busy with various projects, including reorganizing my cookbooks and cooking magazines:

It’s kind of hard to see–I couldn’t back up far enough to get the whole thing in the picture without climbing on the hutch. I even managed to put my 5 years of Everyday Food with all the rest of the magazines. And now I have room for many more cookbooks, including the reprint of Betty Crocker’s Picture Cook Book.
This was the cookbook I spent a good chunk of my vacation reading. I told my mom I wanted it one of these days–So she got it for me for Christmas! I’ve been scouring it for recipes to try, one of them being Ground Beef Pancakes:
In the cookbook, they’re called “Meatball Pancakes,” but they don’t quite taste enough like meatballs to me. I showed the recipe to Jay when I found it, and we both agreed that it sounded bizarre, but good. So I gave it a try.
Even the bambino ate the two smaller ones I gave him–Which is somewhat surprising, only because he’s usually pretty hesitant to test a new dish for me, unless it’s a dessert!
I thought about cooking the ground beef first, even though the recipe doesn’t call for it…I wasn’t 100% sure it would get cooked through, and the last thing I wanted was to bite into a bloody pancake! But it worked…And they were really good! Begin heating a griddle over medium heat. In a medium mixing bowl, whip the egg whites until stiff peaks form. In another medium mixing bowl, lightly beat the egg yolks. Add in the rest of the ingredients, except the egg whites, and mix well. Fold in the egg whites. Coat the griddle with cooking spray, and using a 1/4-C measuring cup, drop onto the griddle. Cook until puffed and browned, then flip to cook the other side, 4-5 minutes. Serve hot.

We just ate them as a snack, but with some mashed potatoes, gravy and a vegetable of your choice, they’d be a good weeknight supper.
Indeed that is a strange name for a recipe — which is why I didn’t wait to visit when I saw my subscriber email! Those look wonderful and remind me of something my father occasionally cooked for us during my childhood. I’ll have to quiz him about it. Thanks for the wonderfully-weird-titled post … and for the memories.
You’re welcome! :) I should’ve asked my mom if my grandma ever made something like this. It’s supposed to be a budget-stretching meal.
You know what else it is? Low carb! That could be a fine substitute for a chicken fried steak.
Ooh, I hadn’t even considered that, but you’re right! Now I want something smothered in gravy….!
I grew up eating these, mom called em hamburger pancakes. Makes ground beef stretch between 3 hungry boys. She used cream of mushroom soup as a gravy. I still this and my 36 yr old daughter goes nuts for these.
I have this recipe from my mother who would be 115 years old now, if still alive.
She called it Hamburger Stretcher. I loved it when I was a little girl and love it still. I’m 70.
